- Glazed ham at Christmas time, is there anything better? Is this the best glazed ham recipe ever? Well it has whisky in it, so that’s a good start.
It's so good, it'll make your neighbours want to all start mowing their lawns at once.
But seriously, this is the only way to cook a perfect glazed ham on your Weber grill. And no, we're not talking about putting some pineapple rings on top of it like they did back in the 70’s.
This is my own family recipe and by sharing it with you, you need to buy me a Christmas present now.

Main Ingredients:
1 x ham, mine was 5.2kg (11.4lbs)
¼ cup of orange juice
Cloves
Glaze Ingredients:
• 1 cup of orange juice
• ½ cup of orange marmalade
• 1/3 cup of maple syrup
• 2 tbsp of Dijon mustard
• 1 tbsp of dried rosemary
• ½ tsp ground cinnamon
• ½ tsp of nutmeg
• ¼ cup brown sugar
• ¼ cup of Fireball whiskey
Items Used:
57cm (22”) Weber Kettle
Chimney Starter
Feeds: 15
Preparation Time: 30 Minutes
Cook Time: 3 to 4 hours (depending on size)
Cuisine: Australian
Hydration: 8 x beers

I did this last Christmas, my Mother in Law (who used to run a café) said it was the best ham she's ever had. I'm doing it again this Christmas. But I think my ham.might have been a bit bigger as it was a 15 beer cook! But so worth nothing getting to bed until 4am on Christmas Day! Keep up the excellent work mate.

I’m doing this tomorrow night for the first time. Can’t wait. Adding red & green cherries too which is a family thing of mine. Cracked the whisky tonight though and tested it, just to make sure it wasn’t “off” or “stale”.

I'm on my third time of cooking this, Schuey. A chef mate of mine rated it as the best Christmas ham he had ever eaten last year, so I'd be silly not to do it again this year mate!

Damn you Schuey! I've just cooked this over Christmas and have now gone through several bottles of Fireball whiskey. I've now spent more on whiskey than my kids school fund....

Fireball glaze and a beer timer…what else do you need? (Sometimes with your timer my cooks are under cooked).

Awesome @user-vq5pw9mv8m , yes mate. It's already brined and cooked ham, so just like an Christmas ham, it will last in the fridge for two weeks (recommended)

Are the coals supposed to be dull or glowing after you close the bottom
You are not fully closing the bottom vent, the coals will be dull as you are starving them of oxygen @TheRainbowHippy81

Glaze Ingredients:

Do you rotate the gril and lid vent away from the snake as it burns?

yeah mate you had me at "this is an 8 beer cook". Love the little tricks you casually drop in as a reminder, move the ham around from the heat source and place breathers on top of the ham. Such a simple trick to keep in mind that can easily be forgetten when starting out
Where can I get one of those small chimney inserts for when I’m doin less brikets??
It is a stainless steel utensil holder, you can buy them at Ikea, Target, Kmart and Big W for a few options Zac Dunne 🍻

Love your videos ive got chargriller without the firebox would i still set up the charcoal in snake method in it. I usually just put in full chimney either side of what im cooking.Might be a stupid question.

Would this same method work with other smokers ? Eg pellet smoker with temp and time?

Hey mate, great videos. Giving this one a crack for Christmas. I struggle to reach 150 odd degrees Celsius using snake method, any tips?
Thanks @jacksonevans7704, depends on the lit fuel you start with , vent set up, weather and the fuel set up mate. I do have a video on the snake method but a 2 to 1 snake (two rows on the bottom and one on top) and start with 14 fully ashed over briquettes should get your Weber to 150c easily mate. If you are using a water pan, don't use cold water as it will absorb a lot of the heat, use hot water from a kettle. 🍻

I'm confused does the ham go from being safe to eat to not being safe to eat and then being safe to eat again when it hit the magical number?
If you take any meat out of the fridge for hours, yes it can and will most likely develop bacteria. Hence why we have food safe temps, not my rule and not a magical number, it is called science Louis Williams 🍻
Gonna do this for a 6kg Ham on Xmas. What weights/ml are the ingredients?

Is the ham already cured and smoked once when you use this method?

Hi Schuey great video! Im smoking a brined pork leg from Drakes. Can i do the initial smoke and then your glaze all in the one cook, or should i smoke and perhaps fridge the ham for a day or so before doing your glaze? Hope that makes sense lol

So you’re using a Webber with charcoal inside . You can literally pass out from the carbon monoxide . My Advice is to do this outside, or in the garage with the door open

I'm filming in a purpose built set I constructed in my backyard mate, the side walls where my camera guy stands most of the time is fully open, with 3 large fans in there as well. It has more ventilation than being outside. Cheers mate 🍻

You say ingredients are by 1kg
You had a 5.2kg ham, is the ingredients list and measurements to your 5.2kg ham or by 1kg?

Do you only skin half or all???
The hock is the only part that has skin all the way around, I do remove all skin, apart from the small amount left on the hock.. The underneath of the ham although it is a dark colour, it is not skin. Angela Saddler 🍻

New to this so need some advice please.
I want to smoke and glaze a ham for Xmas lunch the day before so we will be eating it cold.
Do I still need to get it up to an internal temp if 70 degrees or can I just let it smoke for a few hours to impart the Hickory flavour?

For the glazing part yes, heat it up as per instructions and then you can let it cool down and place back in the fridge and consume cold like and regular ham Allan Power 🍻
