    Great video. "Lysozyme only breaks the NAM-NAG bond. It does not break the NAG-NAM bond." Out of curiosity, what is the enzyme that breaks the NAG-NAM bond?

      Thank you, and true. Technically, lysozyme only breaks the NAM-NAG bond, although for simplicity, most talks just say lysozyme does it all. However, the NAG-NAM bond is broken by a glucosaminidase, which has an identical mechanism (for all intents and purposes). In fact, lysozyme is a glucosaminidase, but the two enzymes are actually different. Here's a source.
