Had to research this. For anyone that is curious, it's called 'thit chua' and is a traditional dish of the Dao people. The pork is salted and then rubbed with cold rice. It's then left to ferment underground. Not sure about fermenting time, but I assume it's for at least several months.

I eat with my hands/fingers with certain things (apples, bananas, sandwiches, crackers, etc.), but, I cannot imagine eating fermented or sour salted pork with my hands! More power to you folks! It's not called"Thit Chua," it's call fermented sour pork.
