    Hi Laura, well done, the pork turned out perfect! A couple of hints you might find useful. Let the pork defrost uncovered. The fridge will dry out the skin. Nothing has a better drying effect than refrigeration and as an example, if you ever get your cellphone wet, just put it in the fridge and it will dry out just fine. I use a box cutter to cut through pork skin. I have one dedicated just to the kitchen and I clean with white vinegar. If you want to add a Chinese flavour to your pork belly. You can bathe the meat in 5 spice and ginger and or, soy, star anise, aminos, ground white pepper, whatever your taste. Just put it flesh side down in the marinade whilst its in the fridge, making sure that you don't get any moisture on the skin. You can also cook it in the marinade. With your method, I'd take the pork out of the marinade and keep it aside to add it to the last 30 minutes of the procedure. Bon Appetite and thanks for your vid.       @@TheKoog97 Im 28 days on carnivore and my rheumatism pain is almost gone. I give a s*ht what pharma says. they want to earn money. carnivore helps, never felt better in the last 10 years. period

      @@Lucy-dx7vc thats fine, however it’s nutritionally deficient. Look into Biolayne or MPMD on youtube, they are very knowledgeable about nutrition and endocrinology. The carnivore diet model is insufficient long term. Most carnivore diet people eat fruit for the carbs and fiber as well. Fiber also decreases all cause mortality by 4x. Im glad you are pain free but probably would have been on any diet that severely limits processed foods.

      @@TheKoog97 thats the pt all carbs are processed & bad for you. Name the ones that arnt and you’ll find there ok on a keto diet. I.e vegetables.

      @@metrobar3367 no carbs are bad for you. Pasta rice and bread is not bad for you. That claim just shows a lack of knowledge in nutrition science.

      Where do you purchase your snacks when you buy. Looked like beef chips, etc. I can get pork rinds at Meijer's, but those other big bags snacks I've not seem. Thank you. Sharon

      @@LauraSpath Great recipe and thanks for taking the time in making the video. I would avoid cooking, grilling or baking with Aluminum foil. It is truly very bad for you.

    Laura, I appreciate all your hard work in making these videos. I would love to see more pork recipes. I buy 30 lbs of beef the first half of the month and 30 lbs of pork in the second half. I'm on a budget (Social Security) so there is more and more pork in my world. Thank you and keep up the good work.

    Fantastic job on the video. Perfectly simplistic descriptions and methods. I’m a big pork belly fan and this is the only video that has inspired me to give another method a try and based on your video there’s no way I could possibly go wrong.     Talk about perfect timing! I watched many of your videos but had missed this one. I just brought home two entire pork bellies with the skin on and was trying to figure out how I was going to cook them. This is perfect! Have one in the oven right now

    Wow I brought 5 lbs of strips so I guess I’ll put a skewer through them to hold them together. Costco had a huge whole slab but I’ve never brought one are cooked pork belly. So we will see how it turns out. Love the recipe for this.

    I recently discovered the air fryer and the first meal was pork belly strips. FANTASTIC as never before. I used a combined 1000watts micro before but in the air fryer is just another level😋 and quickly either

    I've not been able to get pork belly in my area but I buy pork roasts with skin on all the time. I season the skin and cook it at a high temp till it starts to bubble and then turn it down till the roast is down. Oh I slice the skin in thin strips before I do anything else and when it is done, we just pull off the skin strips and eat them. We've always called them cracklns. Never did the salt step before hand, that was new to me. Thanks!

    Just found a butcher with skin on belly but had to buy a huge piece. Shared with my son and he portioned the rest for me to seal. Going to use this method, will be my first belly to ever cook. Looking forward to it. 😊

    I usually smoke my pork belly or cold smoke for bacon . I did your method today because I didn't want to smoke it. It is amazing!

    Pork shoulder steaks rock. It's a common thing here in this part of Ontario. I have been cooking them on the BBQ my whole life. They are great and fast to cook.

    I've tried making pork belly before using another video, and i just couldn't get mine to get crunchy. I'm totally going to the store today to get pork belly and making your version today!! It looks amazing!! I LOVE pork belly, i'm so excited to try. Thanks for sharing. I've been doing keto since January. Your videos have been preparing me to do start the carnivore diet.     OMG that pork belly looks amazing! As soon as I can find a source for this I will cook it this way.
    I am watching this in Feb 2023, so two years since you posted, but wanted to say I hope you liked the pork shoulder steaks--2.50 per lb cheaper than those rib eyes and, for my money, a much better cut of pork. I have been buying them for about 20 years. The meat is tender and the fat is plentiful. :)

    im going to the butcher shop tomorrow and asking for a skin on pork belly and get some steaks. I have been doing keto for about two months and i dont feel so great and have stalled big time. so I am going to go carnivore and see how i feel. thank you for the inspiration.

    Have you considered writing a book called "Carnivore Salad". I have heard you coin that phase and every time I hear I think it is badass. You seem to really have a good grasp on what you need to eat while providing variety which is important to keep a new way of eating from being boring. Just a thought, I couldn't stop thinking about it.

    A non salt way to get the skin really crispy is poke holes in the skin, like thousands of tiny pin holes. The fat bubbles up on top and crispy fries the skin. Old Chinese secret.

    I get my pork belly from Walmart - it comes in 1-inch-thick slices, skin on (I didn't know it came without the skin) I looked at a number of videos and found a lovely Korean lady cooking it for her dish, in the air fryer. I cook mine in the air fryer now, I salt it with the Redmonds and then stick it in the air fryer at 385 , and it's done in about 30 to 40 minutes, (sometimes sooner) I turn it a few times. I cut it in chunks after consuming half of it and eat it as lunch the next day, I actually like it cold, too. I priced pork belly at the butcher, but it's not as reasonable as Walmart. (oh, and I save the lard)

    Hello from Greensboro NC. One week ago I switched from Keto to Carnivore. Down 30lbs on Keto but the last 20lbs I want to loose is a bit stubborn. Hope Carnivore will resolve the issue.     I found pork belly at the local asian market, planning to make it tomorrow. I started doing carnivore-ish about 2 weeks ago, easing into it bc the family hasn't joined in yet. Husband is going more for paleo style, might go carnivore if I can show him I won't die of lack of veggies and budget allows. Corned beef tonight for St Patrick's Day, not making cabbage with it tho

    Very expensive at the butcher shop. I suggest you go to Asian market they are much cheaper there guaranteed. Excellent recipe. I will try it .

    We have a local butcher store like that and I’ve found skin on pork belly and their ribeye steaks are delicious. You’re going to pay a little more per pound, but you save not needing all those vegetables and carbs sides.

    Try boiling brisket in beer with soy sauce. once the beer evaporates, it's ready. an hour and a half. unusual flavor.

    My ketones are the best after eating pork belly the night before. And the best part is, I don't need (or can't) eat too much. But I love that crackling.

    Just bought some pork belly yesterday at Costco, gonna give this a go, but use Himalayan pink salt. Mortons is LOADED with dextrose (sugar), and I don't need that.
