Vegan Arancini (BAKED NOT FRIED) // MoreSaltPlease

    Vegan Arancini (makes 18-20)
    Rice:
    2 cups of white jasmine rice, uncooked
    4 cups of vegetable stock or water
    1/2 onion, diced
    2-3 cloves of garlic, minced
    1/2 tsp dried or fresh thyme
    1 TBS fresh or dried rosemary
    1 TBS herbs de provence
    1 vegetable bouillon cube
    salt and pepper to taste
    truffle oil (optional, but kind of not...)
    fresh parsley
    Bread crumbs:
    1 1/2 cups toasted bread crumbs
    1 tsp garlic powder
    1 tsp onion powder
    2 tsp dried oregano
    1/4 tsp freshly cracked pepper
    1/2 tsp salt
    Dredging station:
    1/4 - 1/2 cup flour
    1/2 cup almond milk
    Filling:
    vegan cheese
    sauteed mushrooms
    In a large pot, start sauteing the onion until translucent. Add the garlic, herbs and bouillon cube and continue to cook for 3 mins. Add the uncooked rice and toast in the pan for 2 mins. Add vegetable broth , bring to a simmer, cover and cook for 15 mins until the rice is fully cooked. After the rice is finished cooking, Spread on a baking sheet and place in the fridge to cool for 15-30 mins.
    Mix together all the bread crumbs ingredients and set up the rest of the dredging station. Take cooled rice out, mix in truffle oil (to taste) and a few tablespoons of fresh parsley. Start forming the arancini by forming a mini bowl in the palm of your hand with the rice and place pieces of mushroom and cheese in the middle, then wrap the rice around the filling and form into a ball. Pack everything as tight as you can so the arancini stays together. Dip formed arancini balls first into the flour, then the almond milk and finally into the bread crumbs. Repeat the process until all the rice is used up.
    Place arancini on parchment paper lined baking sheet and in the oven at 400 F for 20-30 mins flipping half way through.

    I'm Sicilian.. and arancini better said Arancine are way different from this.. but it's clear you are changing into a vegan and healthier recipe... but I hope onee day you'll come to Sicily and try an original one.. it's scandalously amazing and tasty .. have a nice day , greetings from Sicily :-)

      Sara Elkassabany I feel you girl. You can always make the rice ahead of time, and you can freeze the finished arancini and pop them in the oven when you're ready to eat them!

    I want to make this for a party but do you think it's possible to make the day before and bake on the day of the party? Or better to also bake the day before and then reheat the day of the party? Also love your channel and this looks soooo good!

    I'm going to try this with Kokuho rose rice (sushi rice) I hope I wont ruin the recipe!!

      I couldn't find the provolone so I went with Daiya mozzarella. I recommend cutting the shreds in tiny little square pieces or else they stick out of the big balls. The Kokuho Rose rice is definitely a WIN for the recipe! I'm so glad I tried doing a smaller batch a few days before Christmas so I know what to expect, You make it look so easy but the rolling part is a bit hard! The truffle oil is definitely a game changer. I also got the Yves Italian veggie ground round but I didn't put it in this batch.. I don't know how I feel about fake meet but my sister doesn't like mushrooms so I'll give it a try! Thank you for the amazing recipe!!!

      Jeremy Henry you can use ground up Chex cereal in place of the bread crumbs which make it gluten free 🙂

      nathan Elwell I know. Most people on my channel don't make risotto all the time, so normal rice will work just fine.

      daughterofKing1 I don't really understand the purpose of this comment. The way my kitchen is set up requires that I film this way. I don't have a large kitchen with an island in the middle so I can talk in real time when I'm demonstrating the recipes for the camera. Nor do I have a camera man/woman to film me when I cook. I've experimented with different filming styles and this one is the easiest and most time efficient. I don't mind constructive criticism, but comments like this seem to serve you better than they serve the content creator. Not sure what your angle was with this one. No self esteem issues here ✌🏼hope you have a great day.
