Doesn't the FDA require all fish that is going to be served raw to be frozen to kill off all parasites?
Yes, it’s supposed to be frozen a certain amount of time before served
For 7 days minimum but people don't always follow regulations

"Sushi Grade" is a marketing term. "Fresh" isn't fresh, but frozen at neg 31 degrees F for at least 15 hours straight to kill any existing worms and their eggs that reside in the fish. There are currently no FDA regulations on what "sushi grade" is. If you catch any wild fish and eat it raw, no matter where it's caught from, you're at risk for parasite contraction. Reputable restaurants get their fish that has already been frozen then thawed for sushi, or will freeze it themselves per FDA guidelines on killing parasites.
I'm a close resident of D.C. and a reputable restaurant stopped selling any salmon because all of it was infested with parasites. It was good that they watch out to protect the consumer.
If you Google, "FDA Chapter 5 Parasites" you'll get the official article. In January, 2017, the CDC has also posted a warning about wild Atlantic Salmon containing parasites, which is why the earlier noted restaurant had to stop offering their batch.

There is no such thing as wild Atlantic salmon, unless you caught it yourself. It's all farmed poison today. Thanks to the many nations that destroyed the grand banks.
Even high end sushi chef (from japan) dont trow away fish even when its filled with worms. (except when on camera of course). Their general idea is that they are not harmful. And some western scientist start to agree with it. Intestinal parasites might be benificial in some way. Just like bacteria. Not to mention that most species of worms in fish cant actually infect humans and die in stomach acid (unlike tapeworm which do generally NOT come from fish), as they live in the flesh of the fish and enter them trough their skin instead of being eaten. Consider it extra protein ;)
ah... flown in fresh are the ones you have to be worried about. If you really want shusi and want it safe then below 20 degrees frozen for full 24 hours will solve you from Anisakis issues. You have to remember it's quite common in Japan at certain percentage this happens always. So, you wanna be safe then just fully cook above 60 and eat fusion or vege style.

The quality of fish in my city is so good, I’m not worried about enjoying undercooked salmon fillets or tuna steaks. However I’m never catching trout myself as raw or undercooked freshwater fish is almost guaranteed to give you tapeworm!

I tried sushi if it was good, then when my classmate who brought sushi shove the sushi roll with aloe vera onn my mouth. It tasted good when i didnt bite the rice yet. I dont know why but the rice tasted sweet and so is the dried seaweed..i.was crying, cause i didnt like it because the sushi was trying to make vomit...ITS SWEET AF.
This hardly ever happens in Japan because they know how to store, prepare and serve it. I wish sushi restaurants in other places wouldn’t open without doing their research first

The misinformation and wrong information is amazing. I'm FAR from an expert, but I know a couple of things that either A, they don't know, or B, don't care to explain. Sushi--all sushi, MUST be frozen, and restaurants have super cold freezers, to kill any worm. They never mentioned that, and the guest said it's safer when it is "super fresh"--nothing to do with it. It must be frozen first, OR, must be cooked in high heat. Yeah, it is no longer sushi if it is cooked, but I'm talking FOOD SAFETY. It MUST be super frozen, thawed then served OR cooked in high heat. Geez.

sashimi isnt a dish, its a typing, like pasta is a typing, there are different pasta and sashimi, if you are eating medium to small fish, generally not tuna, then real sashimi would be prepared properly. They bleach it in vinegar/salt depending on fresh water fish or salt water fish. This process kills the bacteria and parasites. It is fish dependent on the mixture.
The rice you eat sashimi with has vinegar with it to sterile out the taste of sour in the fish, when you eat pieces of sashimi without rice, they rebleach it in fresh water, or slightly salted water to get rid of sour taste if there is any. If you are getting sick from sashimi that means you have a stomach problem or the people prepping it are doing it wrong and you should report them.
