  • Today we are making incredible tahini helva at home! Plain, with pistachios or chocolate… I am sure it is going to blow your mind 🤯 But I will go a little further and give you another five-minute Refika recipe which is a melted oven helva with chocolate, fruits and nuts which is so easy to make yet hard to resist!
Check out our Etsy Shop: www.etsy.com/shop/Refikadan
    JOIN: / @refika
    SUBSCRIBE: bit.ly/38QQ03R
    Servings: 4
    Difficulty: Easy
    Prep time: 1 minutes
Cooking time: 8 minutes + cooling
    Plain tahini helva,
    200 g granulated sugar (1 cup)
    60 ml water (~ 6 tablespoons)
260 g tahini (1 cup), you can make tahini with my recipe • How to Make Tahini At ...
or you can order our tahini on Etsy, www.etsy.com/listing/99643111...
1 pack of vanillin powder (10 g), or ¼ vanilla pod beans or ½ teaspoon vanilla extract
    A pinch of salt
    For the pistachio helva,
2 handfuls of pistachios, half roughly chopped, half finely chopped
    For the chocolate helva,
    1 teaspoon cocoa powder
A handful of chocolate, roughly chopped
    • First, I need to mention that there is çöven (soaproot, soapwort) in the classical recipe of the tahini helva. It gives the gumminess to it, but it is very hard to control and find, so I discard it to make it possible for everyone to make this beauty. Maybe one day we’ll make it with çöven, for the advanced level😉.
    • To make the syrup, mix the sugar and water in a small frying pan. Shake the pan to help sugar dissolve. Put the pan on medium-low heat and whisk before the water boils.
    • If water boils before the sugar dissolves, sugar may crystalize when the syrup is cool downed. After the water starts to boil, don’t whisk the syrup anymore. Shake the pan to dissolve the sugar instead and don’t scrape the crystals on the sides of the pan. Total cooking time of the syrup will take 8 minutes.
    • Meanwhile, chop the pistachios or chocolate. Line a baking paper in a rectangular (if you have) bowl. Be sure that you are using an enamel or heatproof bowl because the mixture is going to be hot.
    • Mix the tahini, vanillin powder, salt and pistachio in a bowl. Spare a handful of pistachio chunks for the top.
    • Whisk in the hot syrup to the tahini mixture. You need to be quick at this stage because the mixture will be hardened really fast.
    • Transfer the mixture into the bowl lined with the paper and top with the pistachios. Let it cool to room temperature and refrigerate for an hour.
    • To make the chocolate helva, mix the tahini, vanillin powder and salt in a bowl.
    • Whisk in the hot syrup to the tahini mixture. Pour the half of the mixture in baking paper lined bowl and add the cocoa powder to the rest.
    • Give it a good mix and pour in the bowl as well. Mix with the handle of a spoon and top with the chocolate. Let it cool to room temperature and refrigerate for an hour.
    • Plain, with pistachios or chocolate… helva is ready to make you climb a tree😂.
    Refika’s Oven Melted Helva
    Servings: 4
    Difficulty: Easy
    Prep time: 2 minutes
    Baking time:10-12 minutes
150 g helva, roughly chopped, chocolate or pistachio would both do great
    100 g chocolate, roughly chopped
Fruit of the season, sliced, 1 banana, 4-5 strawberry or a handful of sour cherries
    Lemon juice, to garnish
A large scoop of ice cream, to make it even more naughty😜
    • Heat your oven to 200 C (390 F) on upper and lower heat.
    • Place the helva on a medium sized earth ware or clay oven dish or a cast iron pan. Using clay or cast iron is important because they heat up slowly and cool down slowly so the dessert can stay hot while eating.
    • Add the chocolate and fruit. You can add some nuts as well.
    • Place the dish into the middle rack of your oven and bake for 10-12 minutes until helva and chocolate melts. Give it a stir after 6 minutes.
    • Take out from the oven and squeeze some fresh lemon juice to balance the sweetness and add a large scoop of ice cream! If you are lucky and can find ‘Maraş dondurması’ go with that and you will be in heaven after the first spoon!

Refika to stop the sugar crystallising in the pan while boiling it, put a lid on the pan. The steam created will automatically clean the sides of the pan for you. A glass lid is best so you can see what is happening in the pan without needing to lift the lid to check on the sugar.

This reminds me a lot of my childhood back in Romania. We have a similar version called halva made from sunflower seeds inspired by the Turkish one. Before Christmas and Easter people fast for a few weeks. This fast means they don't eat anything animal related (no eggs, milk, meat) but halva is fast friendly for us so my mum and my grandmother would always buy a lot of halva during that time because it is sweet but at the same time it helps you to stay full for longer with this sudden plant based diet. In those weeks I would eat enough halva to last me until the next fasting period. Now after this video I really want to try the tahini version.

Here in Argentina, we have a very popular candy called Mantecol. It's the same recipe, but we use peanut instead of tahini.
A greek family (Georgalos) arrived to Argentina in the 40's, and they started to produce Helva, until they decided to change the main ingredient with peanut ( sesame was an expensive and imported ítem, and peanut was produced localy)

I had some halva/helva once. It wasn't homemade, though. I got it through Universal Yums earlier this month. My aunt subscribed me to it, and each month, they send you a box of snacks from a different country. This month's box was from Turkey and it included halva. I bit into it and it was one of the best things I ever ate. Now I want to make it myself, ideally the chocolate halva.

I loved it, Helva or Halawa (as pronounced in Arabic) is very popular in Egypt, but we have a different recipe that literally takes zero time, you only add 1 cup of powder milk, 1 cup of powdery suger, and finally 1 cup of tahini then mix it well, add any kind of nuts in a bowl, add the mixture in the bowl, press it well, refrigerate it for couple of hours and it's done ❤️ but since it contains milk, this makes it less presistent than the turkish version, but both are just lovely ❤️❤️❤️❤️

The first time I tasted helva was in a tiny Lebanese take away in Paris, I was maybe 8 years old. I still remember the revelation it had been. Many years later, as a parisian student, I found a great shawarma place, which became my pistacchio helva dealer. I don't eat very often helva, but each time I have a bite into it, I am overwhelmed by rememberance and emotion.

Hi Refika, can I substitute the sugar for xylitol or a sugar substitute?
Or what are your suggestions for banting or keto

    • @truthandreason8394
      @truthandreason8394 3 года назад +1

authentically it is made with honey syrup. you can make it with any sweetener that can be turned into syrup. It must dissolve in water and become consistent after boiling it a bit. I think maple syrup can be used.

Lovely stuff. I love helva, think the seseme balances out the sweetness of the sugar perfectly. I don't have a huge sweet tooth but have been known to scoff large amounts of Turkish delight/lokum, helva or baklava when I have the chance.
On having it with ice-cream I made a helva ice-cream a while ago where I put chunks of helva in like they do with cookie dough. Was very tasty.
Thank you to you & your team, the videos always brighten my day.

What a delight to come across your channel, Refika! I have been buying helva from a source in Istanbul, but during this pandemic it has been more difficult to get deliveries here to Hong Kong in a timely fashion. I can live without most sweets - even chocolate - but I cannot live without helva. Your recipe is spot on, and the results … perfect. You’ve saved me a lot of time and expense, and I’ve had fun as well. Thank you so much!
