The Eyja retreat is to slow down the pace the left-lane knight dies at so Mountain doesn't have to hold off a buffed knight for too long, I assume?

Yes. If the left knight died very early Mountain possibly couldn't hold.

I only have Nearl Alter, wich team should use for the stage?

You can simply use a full team to clear the stage except for letting Nearl kills a knight.

How can I do this stage with no event up? I only need this quest for her module.

It's in side story menu. The stage is permanent.
