    Suggestion for those in the comments: try keeping the sauce on the side as a dipping sauce! Then you can preserve the crispiness you created by frying the rolls and keep the crunch while eating

    Cornstarch looses it's thickening power if it's cooled and reheated so if you make the sauce ahead, wait until you're about to serve and add the cornstarch slurry then!

    I love stuffing these with anything, including left overs, including butter chicken, spaghetti (Ok mostly when I make more of a stir fried dish) but also deep frying these is great but double wrap them as they like to split apart, but come out really crunchy, also Air Frying come out ok as well, almost as good as shallow frying.

    In Vietnam we have a similar dish called "chả nem" where we stuff rice noodles with fillings (usually shrimp, bean sprout, wood ear and herbs; but it can vary from household to household), fried until crispy and dipped in a sauce. I was pleasantly surprised when I saw this, great video as always chef!

      Vietnamese food is my favorite food ever!! Sadly there is no restaurants where I live but they just opened a place with Bahn mi in the city a couple hours away so I'll have to make a trip to the city

    Traditionally, Vietnamese people make cha gio or nem ran (what is known as fried spring rolls or eggrolls) out of rice paper. I think deep frying them like they do in northern Vietnam to make their crab stuffed nem ran would have been better as you'll get that crunch. Mmmm!

    That is a tasty sounding stuffing, good amount of chili but nothing crazy. Good call on using only the zest of the lemon. If it were me, I would leave no part of the rolls unstuffed.

    I guess I know what I'm making for my New Years Eve party, although my in-laws are still reminding me they expect the sausage mushroom strudel I made for them two years ago (based on another Food Wishes recipe).

    These are similar to a Chinese dim sum dish called "cheung fun", which are rice noodle rolls filled with whole shrimp and a sweet soy sauce mixture drizzled over top.

    Lmao was just talking to my mom about making some Singaporean Chili Crab for the wife yesterday. So it's interesting to see chili crab stuffed noodles, albeit not the same style, but close enough. Looks so good!
    Also the stove at my place has 2 settings. Barely cooking and the surface of the sun. It's a guessing game with what works when cooking lmao so I'd be afraid cooking rice noodles.

    What a great idea for using the rice spring roll wraps! After you made the spring rolls, you usually have 1/2 a pack left over. Now I have a great looking and tasting recipe to use them up.

    I just made a version of these using spring roll wrappers and chicken because it's what I had. It worked. How ever, I would've preferred eggrolls. The crispiness was unexpected bonus.

    It might be interesting to use 1.5 - 2 ounces so that there are no gaps in the filling, and then refer to them as chili-crab “sausages.”

    I can see the rice paper wrappers being used for gyoza, too! But I am shocked, SHOCKED. that cayenne did not make an appearance in either the filling or the sauce.
