I'm not generally big on flavoured pancakes either - but I did have a brown banana once. Just the one, so not enough to bother with banana bread, so I mashed it up and made banana pancakes instead. Was really good.
chef john's banana bread brownies were a hit with the staff at the pub I used to work for, too. Only takes 1-3 bananas per batch of brownies if you don't do the slices for presentation.

These were an absolute hit with the family! I ran out of milk so I used half buttermilk. Had to double the amount of sugar just to balance with the acidity. Everyone kept saying they taste just like moist lemon poppyseed muffins.

If you want more than the tiniest hint of lemon flavor, definitely add lemon extract. I ended up putting maple syrup on these so they would taste like something.
Adding lemon into whole milk is a great substitute for buttermilk for that very reason! Acidic curdling is fine for baking, it would be something to watch out for if the texture would be an issue in like a custard or ice cream or something or a sauce where splitting is a problem but it all combines up nicely in baked goods and even helps with the crumb and flavor

I was about to call this weird and then remembered I like waffles with all the fixings of a Christmas turkey dinner on top, including the gravy and the cranberry sauce. (Relic of some leftovers from catering a christmas dinner back when I worked food service and the entire crew was high. We had a good idea that lunch.)

As the mad hatter of my pancake batter, I subbed in buttermilk for the milk and folded in the melted butter last. Tangy and lemony.

Adding lemon into whole milk is a great substitute for buttermilk for that very reason! Griddlemuffins are occasionally a nice alternative to pancakes.
I recommend adding just a little Corriander (no really!) and serve with blueberry compote.

CJ did this lemon butter sauce already for eggs Bénédicte: 2Tbs lemon juice, 1Tbs water, reduce to half, cut heat, add 1Tbs cut up butter.
