    📝 Ingredients:
    • 3 Tbsp olive oil
    • 1 cup carrot, chopped
    • 1 cup celery, chopped
    • 1 cup red onion, chopped
    • 2 tsp salt
    • 2 tsp pepper
    • 1 tsp curry powder
    • 1 tsp mixed herbs
    • 1 tsp chili powder
    • 2 tsp garlic, crushed
    • 2 cups diced tomato
    • 2 cups vegetable stock
    • 2 cups water
    • 1 cup green bell pepper, chopped
    • 1 cup zucchini, chopped
    • 1 cup green beans, chopped
    • 1 cup potatoes, chopped
    • 2 cups kale, chopped
    🍽️ Instructions:
    1. Prepare the Base:
    Heat 3 Tbsp of olive oil in a large pot over medium heat. Add 1 cup of chopped carrots, 1 cup of chopped celery, and 1 cup of chopped red onion to the pot. Season with 2 tsp salt, 2 tsp pepper, 1 tsp curry powder, 1 tsp mixed herbs, and 1 tsp chili powder. Stir well and let the vegetables sauté for about 5-7 minutes, until they begin to soften.
    2. Add Garlic and Tomatoes:
    Add 1 ½ tsp of crushed garlic to the pot and sauté for another minute until fragrant. Stir in 2 cups of diced tomatoes, mixing well with the vegetables.
    3. Simmer the Soup:
    Pour in 2 cups of vegetable stock and 2 cups of water.
    Bring the mixture to a boil, then reduce the heat and let it simmer.
    4. Add More Vegetables:
    Add 1 cup of chopped green bell pepper, 1 cup of chopped zucchini, 1 cup of chopped green beans, and 1 cup of chopped potatoes to the pot.
    Let the soup simmer for about 10 minutes, or until the vegetables are tender.
    5. Finish with Kale:
    Stir in 2 cups of chopped kale and let it cook for an additional 2-3 minutes, until the kale is wilted and tender.
    6. Serve:
    Ladle the soup into bowls and serve hot, accompanied by your favorite bread.
    Tips:
    • For extra flavor, add a bay leaf while the soup simmers and remove it before serving.
    • Adjust the seasoning to your taste by adding more salt, pepper, or chili powder.
