Personally, when I can, I refer them out to someone I think might be a good fit. I've always done this, and known for it. I sometimes get mutual referrals, but customers are usually appreciative when it's handled right.
you have a few options. do the work, take on the client, but don't showcase the work. Or, refer it to someone who you know will knock it out of the park and win the respect and trust of the person.
