    Soyabean ki sabji is a nutritious and delicious Indian dish made with protein-rich soyabean chunks cooked in a flavorful tomato-onion gravy. This vegetarian and vegan-friendly recipe is quick and easy to prepare, making it perfect for a wholesome meal. Rich in spices and packed with flavor, soyabean ki sabji pairs wonderfully with roti, paratha, or rice, offering a healthy and satisfying option for lunch or dinner.
    Ingredients:
    - 1 cup soyabean chunks
    - 2 large onions (finely chopped)
    - 2 large tomatoes (finely chopped)
    - 1 green chili (finely chopped)
    - 1 teaspoon ginger-garlic paste
    - 1/2 teaspoon turmeric powder
    - 1 teaspoon coriander powder
    - 1/2 teaspoon garam masala powder
    - 2tbsp kitchen king masala
    - 1 teaspoon red chili powder
    - Salt to taste
    - 2 tablespoons oiil
    - 1cup fresh curd
    - Fresh coriander leaves (for garnish)
    Instructions:
    1. **Prepare the Soyabean Chunks**:
    - Boil water in a pot and add the soyabean chunks. Let them soak for 10-15 minutes until they are soft.
    - After soaking , rinse the soyabean chunks with cold water and squeeze out the excess water.
    2. **Make the Tadka (Tempering)**:
    - Heat oil in a pan. Add the finely chopped onions and sauté until they turn golden brown.
    - Add the green chili and ginger-garlic paste. Sauté for a few seconds until the raw smell disappears.
    3. **Add the Spices in curd**:
    - Add the pureed tomatoes and cook until they become soft and mushy.
    - Add turmeric powder, coriander powder, red chili powder, and salt. Mix well and cook the spices for 2-3 minutes.
    4. **Cook the Soyabean Chunks**:
    - Add the boiled soyabean chunks to the pan and mix well with the spices.
    - Cook on medium heat for 5-7 minutes, allowing the soyabean chunks to absorb the flavors of the spices.
    5. **Finish with Garam Masala and Coriander**:
    - Add garam masala powder and mix well.
    - Garnish with fresh coriander leaves.
    6. **Serve**:
    - Serve the soyabean curry hot with paratha, roti, or rice.
