I think the real challenge in this game is when you play the campaigns on the faction(s) which lose those wars. Well all except the Triple Alliance, that war was really a f***** up war for both sides.
Hope you play the Mexican-American war campaign with both sides, and the simultaneous American civil war - second french invasion of México campaign (I think is called "The Eagle and the Empire) on the future!
P.D: If you want an uprising in Philippines you must destroy the spanish navy on the harbor.
