Haii sir am your new subscriber and recently found a good pastry chef and i have a doubt sir.. u said 150gm of dark chocolate either need to use compound or dark chocolate can u clear this .. like dark chocolate means vanhouten or nrml compound
Thank you for the subscription, dark chocolate means I usually use couverture chocolate. You can use compound chocolate too, but since there is vegetable fat instead of cocoa fat in compound chocolate, the final product will be slight thicker than the usual.
