I don't have a Staub brand skillet, but do have a Stargazer, and Lodge 10.5" skillets along with a 12" inch skillet I inherited from my grandmother and mother. They work just fine for me and I also have two dutch ovens from Lodge which works fine also.
slurp!...can I suggest to add salt and pepper after grilled, it helps to don't loose the beef juice...I am not expert, I was told by my Mom and chef de cuisine..;-) xox
A good quality of pork chop don't even need to add salt, but this, I have to put salt before cooking otherwise don't taste good. But thank you for your tips ^x^

Looks so good and tender and yummy.
Cook in this way will not over cooked the pork chop ^^ My partner favourite is onion tomato pork chop.

Why did you use paper towel to soak up the oil/grease while searing the pork chop?
To remove extra fat (optional).

i have the same pan and i hate it because all food gets stuck on it. How are you dealing with it?
Heat the pan first, use medium to medium high heat then put oil or cook the fatty part of the meat first.

I heard you shouldn't because if you do you spread the bacteria around the places you wash. The cooking will kill all the bacteria

@@karllander4988 I think its fine to season it with salt and pepper before cooking. Thats what chief Ramsy do when cooking a steak
