  • Cheesy Olive French Bread
    French bread:
    1 c warm water (between 100° and 115°; NOT above 120°)
    1 Tbsp honey
    2 tsp dry yeast
    1 Tbsp olive oil
    3 c plain flour
    1 tsp salt
    1 egg white (for brushing on dough before baking)
    In a large mixing bowl (or bowl of a stand mixer) , using a dough hook attachment, combine the warm water and honey then sprinkle yeast over the water and allow it to become foamy and active (waking it up!). Add in oil, flour then salt and turn mixer on, allowing it to mix well, for FIVE minutes. (If you’re mixing by hand that’s fine too.). After five minutes turn mixer off and allow dough to rest for FIVE minutes; during this time the flour particles are absorbing the liquid. Turn mixer back on after the rest and mix for FORTY minutes. After that forty minute mixing, clean dough off dough hook and cover the bowl with a disposable shower cap or a clean kitchen towel. Allow he dough to rest and rise for an hour. After that hour you can now shape your loaf of bread. Roll out dough on a clean countertop using a rolling pin; roll it out in a rectangle, not letting the length of the loaf exceed the length of your baking pan you’ll be baking it on. (You will want to use a shiny metal baking pan and I like to use a sheet of parchment on it for easier handling.). Roll up your dough into a jelly roll style loaf and place it on the baking sheet, making sure the seam of the dough is on the BOTTOM side of the loaf, facing the surface of the pan. Cover with a clean kitchen towel and allow it to rise in a warm place for 45 minutes to and hour or until doubled in size. After this rising time, preheat oven to 350° and, using a silicone pastry brush, lightly brush the surface of your loaf with an egg white. Next, using a VERY sharp knife, make slashes in the dough surface. This will allow he bread to rise during baking without cracking the sides or other surfaces of the loaf. Bake in the 350° preheated oven for about 20-25 minutes or until the surface of the bread is beautifully browned and shiny.
    Cheese topping:
    6 Tbsp butter, softened
    2/3 - 3/4 c great quality mayonnaise (I prefer homemade….check out my video on how to make it!)
    10-16 ounces mozzarella, shredded (don’t use PREshredded)
    8 green onions, chopped (green tops only)
    8 ounces canned mushrooms, drained well and rough chopped
    4 1/2 ounces canned black olives, drained well and chopped
    Combine ingredients in a large mixing bowl and mix well. Slice French bread in half, like you’re making a TOP and BOTTOM bun out of it. Spread cheese mixture on the soft, inside part of each half of the bread. Bake in a 375° preheated oven for 15 - 20 minutes (or longer….maybe 25-30 minutes, if you’ve made this ahead of time and stored it in the fridge) or until the cheese is melted and bubbly and starting to brown slightly. Remove from oven and allow to cool slightly before slicing not individual portions. Enjoy!
