that would be amazing, I remember seeing Jamie Oliver do this with a creme brulee touch, he cooked out the custard, poured it into the cups to set in the fridge then poured a little caramel on the top, bloomin lovely
Don't know what it's called but recipes online - search feta filo (also ph____ spelling). Basically small block of feta cheese cut into thumb size bricks, wrap in buttered filo, fry in clarified butter/ghee, or bake. Serve drizzled with raw unfiltered honey. Salty sweet cheese delight!
I am pretending comments make a difference! I love crispy flakey doughs. Puff pastry works well to make a "container". Cut the dough into approx. 4 inch squares then cut/deeply-score an approx. 3 square in the middle. Baked in the oven. Plate a square and press down the center of the pastry (the inner 3 inch square) with a fork. Then fill them up and garnish.
Thanks mate, I think you're describing a large vol au vent there. It's nice now for me a year after being a good boy with the low carb and sugar lifestyle, as I can have a day off here and there and I seem to have found a happy compromise I did get my bike out of the shed last week and intend to get a lot more exercise. @@unclemattscookerylessons "vol au vent", I am sure it was French style. The chef that trained me worked his way up through some high end "classic" restaurants. I am looking to exercise more even just getting out and about. I drank to much these last couple of years and have been stuck in the house more than anyone should. I am looking forward to our spring. We still have at least a foot and a half of snow on the ground here...
