    INSTANT POT CHICKEN WILD RICE SOUP RECIPE:
    🔴Ingredients:
    ● 1.5 lbs any chicken pieces
    ● 1 large onion, finely chopped
    ● 2 large garlic cloves, minced
    ● 2 large carrots, coarsely chopped
    ● 3 large celery stalks, diced
    ● 2 large potatoes, diced
    ● 1/2 cup dried mushrooms or 2 cups fresh brown mushrooms, sliced
    ● 1 1/2 cups wild rice
    ● 9 cups water or low sodium chicken broth
    ● 1/2 tsp thyme, dried
    ● 1 tbsp mustard
    ● 2 tsp garlic powder
    ● 2 tsp salt
    ● Ground black pepper, to taste
    ● 2 cups 2% or whole milk
    ● Small bunch parsley, finely chopped
    🔴Instructions:
    ● In Instant Pot, add chicken, onion, garlic, carrots, celery, potatoes, mushrooms, wild rice, water, thyme, mustard, garlic powder salt, and pepper. Cover, set pressure valve to Sealing and press Pressure Cooking on High for 25 minutes. After wait 10 minutes and do Quick Release to release the pressure by turning the valve to Venting.
    ● Remove chicken onto plate and shred with 2 forks. To Instant Pot, add milk and using an immersion blender give a few pulses until soup is desired thickness (don’t forget to stir and feel free to adjust thickness with extra water and spices). Add shredded chicken, parsley, stir and serve hot.
    🔹Store: Refrigerate in an airtight container for up to 5 days or freeze leftovers for up to 3 months.
    🔹Freezer Meal: In a large Ziploc bag, add all ingredients (except water, milk and parsley), release out as much air as possible, seal and freeze for up to 3 months. If cooking in slow cooker, thaw in the fridge for 24 hours, add to slow cooker along with water and cook as per above instructions + 1 hour. If cooking in Instant Pot, cook from frozen for 25 minutes with Quick Release. After follow last step in the recipe.
    🔹Make Ahead: In a large airtight container, bowl with a lid or slow cooker’s insert, add all ingredients (except chicken and parsley) and refrigerate for up to 12 hours. Add chicken and cook as per slow cooker instructions. OR store chopped veggies with spices in an airtight container for up to 3 days and mix with the rest when ready to cook.

    Born and raised in Minnesota. Wild Rice soup, Hot Dish, Wild Rice used in hearty grain breads, sausage/meats. So many uses for Minnesota's grain Wild Rice. Cooked Wild Rice, cooked carrots, celery, onions while warm add a simple vinegrette and chill. Wonderful for summer, Wild rice is heavy in carbs but very high in fiber and protein

    Hi, Olena! I made this recipe this weekend and it is delicious...thank you! I put a split chicken breast in with the bone then shredded it off the bone and put it back in. Since I don't have an immersion blender, I took your advice and took out some contents, mashed them a bit, and out them back in to thicken the soup. I made a bunch of individual servings and stocked my Mom's freezer. She's very happy about that!

    I made my very first thing in my Ninja Foodi last night, and it was this dish. I used 8 cups water instead of nine, because I was at the max pressure line, but it came out delicious. I'm a believer now! Суп був дуже смачним, і я ціную ваші зусилля.

    Thank you for another delicious soup recipe! What did you mean when you said you tested the Chantelle mushrooms with onions - that you'd already eaten them and knew they were ok to eat, or is there some way to "test" wild mushrooms by boiling them with onions to make sure they're safe to eat (aside from just eating them)?

      Thank you for watching! If you boil wild mushrooms with an onion and it doesn’t turn purple, mushrooms are edible. That’s how we tested them in Ukraine. I hope that helps 🙂

    Another scrumptious looking recipe! I was so excited to make this for lunch since the kids are home from school today, until I got to the part where you said "NO SUBSTITUTES" for wild rice. 😭 Perfect excuse to get them out of the house and take a walk to the store! 😁👍

      Sorry. It just won’t be a good experience lol. Walk is great. I learnt to always buy 1-2 packs of wild rice and keep on hand. It’s one of those specialty items. Hope everyone enjoys it!!!

      Soooo we walked to the store to get the rice, and you were right...wild rice is a bit expensive. In our local supermarket(not discount) it was $7.99CDN for 350G. I didn't get a chance to make the soup that day, but because it's Thanksgiving weekend and I have leftover turkey and gravy(added to my boiling water instead of broth) , I decided to make it for lunch today. Ooooooooh 👏my👏goodness👏 Olena 🙌 This is going on my family's list of fave soups which means I'll definitely need to keep stocked up on the wild rice. 😉

    Can I omitted the milk in this recipe. Here in the UK creamy soups aren’t as popular as in the US.

      It's OK. Soup just won't be as thick and creamy consistency which is totally fine. Or you can mash with a potato masher a small amount in a bowl and put it back. Enjoy!

      TAKE A CUP OF COOKED SOUP OUT AND PUT IN A REGULAR BLENDER OR FOOD PROCESSOR AND PUREE ADD BACK INTO SOUP, I DO THIS ALMOST ALL MY SOUPS.

    You are missing so much flavor by not sautéing the chicken in the instant pot before you added the vegetables. All of those little bits of chicken flavor are deposited on the bottom of the pot. Like your recipe, keep up the good work.
