I love the way you make something you know how to do to look so easy…. It’s like walking into your shop and you start working

nice to see professional chefs have the same solutions to opening bottles as professional archaeologists.

I have every desire to make my own salami and ham, and no reason to, because a) only two of us, and b) would struggle to get the conditions correct, but I absolutely love salami and ham. Beautiful!

I just made this exact recipe with five kilos of pork and I added a bit of ground coriander seed to add a floral note and some cognac to mine. My fat to meat ratio is 70/30 lean/fat, its been curing in my meat chamber about two weeks it smells amazing.

My family used to make something from a pig's head. It was called (phonetically) 'sowce' meat.
Similar to the word that this recipe is called. It was a lot of little tidbits cooked with spices and then jellied in the cooking liquid.
