I love this recipe video, I found myself almost licking the screen of my tablet! This weekend I plan on making salmon salad sandwiches, and ramen with fresh onion, garlic, and ginger.
I like making this salad though i usually don't use cucumber. Sometimes I mix in baby spinach leaves and pickled onion instead of the shallot. I'll try it this way next time
FYI: If y'all haven't seen or hear about it, there's some HUGE problems when it comes to watermelons. It's horrible. Watermelon is my favorite fruit. There's many videos on YT.
There are more ways to make salad than iceberg lettuce, a cherry tomato, a slice of cucumber, croutons, and ranch dressing. If this isn't for you, just don't make it. 🤷🏼♂️

This is my version, which I've been making for about 3 decades. I got the recipe from a magazine; I've made it many times annually ever since.
I'm not ready for summer to be over yet!
Personally I'd replace the parsley with mint or basil to go with the other ingredients
I would be curious to see how a sprinkle of nuts would work with this. I like a lot of crunch in my salads. Maybe chopped walnuts?

Lol...that's the way I felt about fish tacos but I tried them anyway. Now I love fish tacos. Point being you never know until you try :)

I peel the cucumbers. Love it with some black olives ... Skip the parsley, add chopped heart of iceberg lettuce .... I use lime, not lemon.
