I'm surprised. I usually use sweetened condensed milk for glazes similar to Antonio Bachour. And yet here you are not adding that at all. Didn't realize I could do it this way too lol. What is the height of your pastry rings?
It’s different what kind of glaze recipe people prefer, I just prefer this one in terms of taste and texture vs a more sweeter one with condensed milk ☺️ You can actually find the full recipe for that under my pinned reels on Instagram. The pastry rings are 6 cm tall 🩷
We are not all Koreans who don't understand what ASMR is. We don't need to hear the sounds of you throwing nuts into the blender, cream splashing into the pan, or the whisk scraping the bowl, especially when it drowns out the sound of your instructions. Otherwise, the cake looked great and the steps were clear.

Hi! Does the mirror glaze need to rest for one day, or, can I use it as soon as it hits the right temperature?
You can use it as soon as it hits 34-35 degrees :) depending on how hot/cold the room is, it usually takes between 1-2 hours for it to cool
