Made this cake for NYE party. Had to convert to oz. Doubled the fruit filling and yoghurt filling. Need to work on my mirror glaze a bit- had bubbles, had to boil my knife between cuts- but it was AMAZING! Perfect after our very rich dinner. Thank you for this video. I only had to watch it 20x 😅.
Beautiful, keep them coming it’s a delight to watch it being made. A written version with instructions would be helpful for those of us that are less than talented with pastry making .

Great work chef. What do you do with the leftover glaze? Can you turn it all back to white?
The leftover i always freeze and create new effects with it when glazing( different colours).

Always can be reuse again, if not as a garnish than for the cream or sponge.
