Kinda confused what you could target with Synchro Overtake except Junk Synchron, since its name is the only one specifically listed as synchro material like for Junk Warrior. What am i missing?

That is the only target. You could play jet warrior instead if you want but this is already consistent.
You can also play the normal majestic dragon and either search it or special summon it
If you have shooting star dragon you can special summon stardust dragon from gy
