    Hello smoking some pork should i remove the ashes from the smoker while the pork is cooking? Once the wood turns gray/ashy should I remove the ashes?

      No dont remove it while its cooking leave it, or add more wood chips on it

      When you done using the smoker let it cool down once the smoker cool down then remove the ashes

      Thank you, I thought i had to remove the wood chips once they turned to ash, so they would not burn. What about the water add more or is ok empty. Also my smoker runs hot above 225. even with only one burner on and all vents opened. Food on top rack..

      @@j.4198 If You see the smoker shoot up like a rocket that's the best time to add water is because water pan is there to control the temperature of your smoker
