    I know you get a lot of criticism from people for your stance on buying a freeze-dryer, but not only do I appreciate your honest feedback on them (and your video last week on the GreenStalks), it also makes you a lot more trustworthy as a source for information. Too many homesteading channels feel like shopping channels, reliably saying that yes, you should buy every single item and product, boosting everything as indispensable and an amazing timesaver you could never do without, etc. No wonder so many newcomers are scared into thinking they could never afford to do this!
    For me, when I see a channel always being positive on every product they buy and are sent for free, I stop trusting their word, because I've been doing this long enough to know most all trendy products will disappear in a few years when everyone moves onto the next BIGGEST THING. Good for you for staying true to what you see and experience, and not being swayed by the false earthly pressure to promote consumption.

    My garden took a rest this year because of health issues. God gave me several volunteer plants. I have yellow cherry tomatoes, wild daisies that are medicinal, a new asparagus plant, but I was able to plant some tomatoes and squash (with help) in grow bags on my deck. They are doing great. I'm thanking the Lord for His surprise bounty and also friends sharing their cucumbers with me.

    Im so glad a long time ago, you said that dehydrating works just as well as a freeze dryer for most things, for you.
    I wanted a freeze dryer but they were so expensive.
    Saw several people complain about freeze dryer breaking & they refused to fix it; then saw others talk about added cost, lack of storage room, changing oil & maintenance.
    Decided I dont want one.
    Ive found that I can freeze certain things & then dehydrate from frozen with good results.
    I love dehydrating peppers, other veg & fruit & even eggs.
    Im very happy with my dehydrator but if it ever breaks, thanks to you, I know that the movement of air with little heat will also work.
    A woodstove, heater, or even laying food outside with screens.
    We all need to learn how to do this just in case electricity is off.
    Love all the info you've given me! Your channel is my favorite!

    Hi Heidi, I've tried dry canning potatoes. They taste great, almost like a baked potato. I've come across instructions in 3 canning/preserving books to dry can sweet potatoes. I haven't tried the sweet potato dry canning method, only because I came across it this spring and because I don't grow sweet potatoes. Have a super day!

      I have been asked this several times but the reason it is not something I see myself doing is that what I focus on or choose to eat changes from season to season or depending on what I feel my body needs. I do try to stick, most of the time, to eating in a specific time window because that works best for me and then fasting at least one day a week, though that also comes and goes depending on the time of the year and how physically active I am. This is much harder to do during the summer months than winter.

    Heidi, like you I am not fond of dehydrated beans either! they are tuff or maybe chewy. I love canning as well certain things. As your talking about the cabbage, I am dehydrating some now and been doing the cabbage for years and I love it.     Lol! Yes, you can talk about vinegar! I'm currently battling Japanese beetles in my garden and I 'm not sure I'm winning. I picked some green beans this morning and like you, I prefer them canned. Those bugs are even eating my marigolds. Never seen anything go after those before. Just got to carry on. Love these this and that's!

    Our wild mullein seems to be next to railroads & farm fields. Was told not to use those because they absorb toxins. But I was wondering if I transplanted it or get its seeds if it would eventually be ok..

      I would think if you transplant it, just do not use any of it until at least the next year and for certain you can use the seeds and start new plants

    Refrigerate your seeds for 6 wks in sand or dirt .. they need cold stratification.. I put mine in fridge in January take them out in middle of February and plant them in little containers put them on my sunny window sill

      Cover crops do not work well in our area. Our late fall through early spring are just too wet for such things and also not mentioned in scripture. Land has a tendency to make its own cover crop and allowing my chickens to roam free still keeps the slug population down and they add their own fertilizer

    This week I finished dehydrating 1 and 1/2 bushels of blackberries and raspberries form a freezer clean out. Awesome space saving thing. They will mostly be rehydrated in k2 kombucha, juice and dumplings.

      Next year I plan on dehydrating up a lot of berries. I did a few this last year just to try it and know those I can powder up if I want to for flavoring since they have less sugar than other fruits, they do not need freeze drying to be able to use in that way

    I really appreciate when you say try it first. Prepper Princess just talked about how she had finally opened and tried some of the stuff she had been saving and turns out she didn't like the way it tastes etc. Who would want to find out in an emergency that they didn't like any of the stuff they had saved up for just such occasions. Would be awful to eat food you didn't like every day just to keep from starving etc. I like the idea of the freeze dryers but don't have that kind of money nor would I be using it enough to justify the cost to me.

      Yes, l totally agree with you on letting plants mature in a bigger pot, to give them a better chance when you put them in the ground. We live in a hot/dry/cold/dry climate, and I have done this many times. Always works. Especially with plants not native to our area, and plants that need a more moist/cloistered start. But l would take the opportunity to make some grape jelly/jam, while you aren't canning... deeelishusss !!! Thanks for another encouraging video. Love , hugs and prayers.😊❤️🐨

    Speaking of dehydrating, I have two questions: how do I keep DH carrots from turning white while in storage? And, why do my green peppers turn blacknin storage? I am blanching carrots but not peppers. Thank you in advance.

    Not going to apologize for my freeze dryer. Yes it was expensive but I love how it preserves the color and texture of things. I freeze dried onions and when rehydrated taste and crunch like fresh. But, I am experimenting with every way to preserve, especially my first time veggies. I pickled beets and canned carrots and now am freeze drying some to see which one I like better. I dehydrate all my herbs. Down side of freeze drying is the limited space in the dryer as well as the length of time I need to run it and the down time to let it defrost between batches. So with a bounty coming in, canning is my current go to. String beans are awful dried either way, so I will can them and add garlic and onion to the jar. I accidently planted all pickling cukes. After I jar up some pickles im gonna experiment with making pickle chips and will try both dehydrating and freeze dryer to see which I like better.

      I hope it never sounds like I expect anyone need apologize for the choices that work best for them. It is good for those like yourself to share the positive benefits to you just as those who share why they did not like their investment or why those like myself who did her research first decided against it. Everyone is different and thus being able to compare the good and the bad is VERY important, especially when it comes to such an investment

      The only thing I don't like about a freeze drier is it doesn't shrink things down like dehydrating. If money were no object, I would do both.

      Not approved by Canning Nazis but I do not care what they have to say, I go by _real_ life experience from the many others whom have done this. If the jar has been heat pressure canned, the amount of water in the jar would not matter. Many just say it is best to use it within a year

    Mullein here grows mainly in gravely areas. I'm wondering if soil is just too 'hardy/rich' for mullein. Stick a plant or seed along a gravel road up to your other piece of land..it may do well for you :)

      For some that could be an issue, yes, but now that I have it growing well as it has been acclimated, it proves that it can grow in other types of soil

    I have a question. I received some cucumbers and squash from a relative and she said before she did her planting she treated the soil with chemicals for weeds. Wouldn't those chemicals be now in the veggies? Are they safe to eat now?
