Because of this eating lifestyle I have been able to avoid being put on 4 medications, maintain a 17-pound weight loss, maintain a blood pressure range of the mid 120's to the low 130's, as well as maintain an a1c in the low 5's.
    Today's recipe is a Low-Sodium. Low-Carb, Low-Sugar with a decent amount of Protein. It's a nice sidekick for any meal. The Healthy Highlights and Recipe are as follows:
    Broccoli Cheese Soup
    5 Servings (1 cup)
    Healthy Highlights
    Cals=255 SatFat=12g Chol=40mg Sodium=323.6mg Carbs=7.6
    Fiber=2.5g Sugar=1.8g Protein=13.3g Net Carb=5.1
    Ingredients
    Broccoli Florets (Frozen) 12 oz box
    Sweet Onion ¼ small
    Garlic Powder 1 tsp
    Onion Powder 1 tsp
    Garlic Pepper ¼ tsp
    Kosher Salt ¼ tsp
    Coconut Milk (Thai Kitchen-Lite)-13.66oz 1 can
    Chicken Broth (Unsalted) 1 cup
    Cheese Shreds (Swiss) 1 cup
    Cheese Shreds (Mac & Cheese) 1 cup
    Directions
    Cook broccoli according to package
    Drain well and cool with cold water
    Finely chop broccoli and put into a large pot
    Mince onion and add to broccoli
    Add remaining ingredients to pot
    Blend together well
    Bring to a boil then simmer for 10 minutes
    Ladle 1 cup of soup into bowl and garnish with 1 tablespoon of cheese shreds
