I know it’s not as flavourful as a rib-eye but I love the texture of a medium rare fillet. It just melts in the mouth! We have a great butchers near by who have some wonderful cuts. For treat night I get a couple of fillets, shallow fry them in garlic, rosemary and thyme and serve it with creamy mash and red wine jus. Heaven!
