Dry, wet aged are all marketing. Most important things for a steak are the cut, type of cow, and cooking techniques. Back to the basic, why age the meat when you can eat fresh? Aging is because the steaks don’t come in fresh. They were frozen and imported.
The ones from America to SE Asia aren't frozen. Just refrigerated. Doesn't go down to minus zero. That is the official freezing point. It's very odd that this is how it is served in SE Asia. No wonder the meal that I had recently were praised by my family.... which is kinda true. But to be fair. This isn't how people had it in Europe. I realised now why the Argentinian steak that I had once were so raved about. They must have been treated like this as well. Whereas in Europe.....we don't "mature" it this way. You could still see the blood. Lol. So medium rare is nice in the UK. But maybe if I was to eat that in HK.. maybe medium is better. Cos you want to kill off more bacterias.... basically. And I would want a leaner cut. Just a smaller piece as well. I actually don't get why HK has frozen burgers then... cos they should just serve nice steaks etc. Something needs to be done in HK... I realised why you can't get that "fresh" tastes any more.... it's very odd.

個人感觀,美牛真係肉味最濃,日本同澳洲和牛,真係食油脂嘅芳香。韓牛呢,講肉味,又唔夠濃,但肥得嚟食落又冇日本和牛油膩;阿根廷牛都好食有牛味,但相對美牛比較韌。炭火燒嘅牛,嗰種炭香燶味,真係明火冇得比。

依間扒房試過呀, 個人口味嗰次塊扒真係牛魔王嘅頭三位餐廳, 有肉汁肉味, 面層有少少香脆, 份量夠 ! 雖然頭盤好多都好, 但吾會叫太多, 因為食飽左會將塊扒減分, 塊扒先係主角 ! 有啲扒房話自己係高級, 但塊扒整完出嚟, 真係又 DRY 又 AGED !

Dry aged 牛扒同blue cheese 因為lactic acid 而味道相似,其實都講左好耐,所以個挑戰好似好易wor😂睇牛扒最期待有人講下rib eye 同sirloin 一齊食夠竟有咩大分別,畢竟呢個兩款唔計tenderloin 都係最貴既部分,食咁多次都唔知有咩分別,另外都希望睇下flat iron 同bavette steak 呢類性價比高既扒
rib eye is fattier and juicier while sirloin flavor is bolder
