  • A classice take on an American comfort food staple.
    Here is what you'll need!
    COZY CHICKEN AND DUMPLINGS
    Serves 6
    INGREDIENTS
    Soup
    2 tablespoons oil
    2 pounds chicken breasts
    1 large onion, diced
    4 carrots, sliced to ¼ in half rings
    3 garlic cloves, minced
    1 teaspoon salt
    5 tablespoons unsalted butter
    6 tablespoons all-purpose flour
    6 cups chicken broth
    ½ cup heavy cream
    ½ teaspoons dried thyme
    2 bay leaves
    1 ½ frozen peas
    4 tablespoons fresh minced parsley
    Dumplings
    2 cups all-purpose flour
    1 tablespoon baking powder
    ½ teaspoon salt
    1 ⅓ cups heavy cream
    PREPARATION
    In a 6-quart dutch oven, cook chicken over medium-high heat until brown on both sides. Once chicken pieces are browned, remove and set aside.
    Add carrot and onion and cook until just tender, about 3 minutes.
    Add garlic and stir for another minute.
    Reduce heat to medium-low and add butter and flour, stirring constantly for 3 minutes to avoid lumps.
    Add chicken and any accumulated juices back to dutch oven and stir to to coat in roux/vegetable mix. Add chicken broth, cream, thyme, and bay leaves and bring to a simmer. Once soup is at a simmer, add frozen peas and cover.
    In a separate bowl, combine flour, baking powder, salt, pepper, and cream. Stir until mixture comes together into single mass of dough.
    Using a large spoon or ice cream scoop, form dough into small round balls about 1 inch in diameter (this dough mixture should yield 14-16 dumplings).
    Place dough balls into simmering soup (making sure they don’t touch), and cover. Let soup simmer for 15 minutes or until dumplings are cooked (they should pass the toothpick test).
    Ladle into bowl, giving 1-2 dumplings per serving.

    The dumplings look good. I’ll say that, but My, Lord, you have to season your chicken. There’s nothing worse than unseasoned chicken.

      Claudius Reed I eat chicken with no seasoning on it all the time. Maybe it’s an American thing, but chicken in the UK tastes delicious - you don’t need to add anything to it.

    For those saying that these aren't dumplings, they are. They're just one version of them. This is how dumplings for soups are made in the Caribbean, although in my household we use wholemeal flour. Admittedly though, they are slightly big, but the dough is supposed to be able to bite into. If you want to add fillings, go right ahead. But as far as I know, these are dumplings too, just in a different culture than yours.

      +Shannon Jordan It's funny when people say "this is how dumplings are made in ___" yet no-one mentions how they're made in China, where they ORIGINATE from. They first came 1,800+ years ago in the Eastern Han Dynasty when they were filled with mutton, chili and herbs to help with frostbitten ears in the bitter winters in China. They were later developed to contain minced meat and vegetables. Different places have different versions, but don't call it a traditional dish when it's obviously not how it's made traditionally. If it's a 'dumpling', it has meat and vegetables, how it is where it was born. If it's a ball of dough, call it so. Don't take traditional delicacies from a country, change it completely and still call it the same dish. It's like 'curry' around the world is completely different to the original traditional Indian delicacy of 'chicken tikka masala'.

      I hope you are aware of he fact that different people can develop similar things without ever coming in contact with each other? Like bows, which were used by people all over the world who never even knew about each other. The fact that China came up with dumplings at some point in time does not mean no one else ever did anything similar by themselves and it sure as hell does not mean that making dumplings the chinese way is the only "right" way.

      Definitely... My mother who in my opinion makes the best chicken and dumplings I've ever had, always told me to make the dumplings small, because they cook better, and faster. Plus, this is way too "soupy" for me. I enjoy mine thicker, more creamy...

      If you're going by technicalities, since you've got the definition, how about looking up the origins of the first ones? They originate from China 1,800+ years ago with wrapped mutton, chili and herbs in dough skins to help with frostbitten ears in the bitter winters. They later developed into minced meat and vegetables, until foreigners evolved it and moved it into different parts of the world. The technique of making traditional Chinese dumplings is hard so it's much easier to just make it as balls, which is why it's stayed like that. It's similar to the 'curry' which is almost always different to the traditional 'chicken tikka masala' dish from India. They're simply not the same.

      actually, there's more than one kind of dumpling... there are also asian dumplings (or even ravioli) with meat and vegetables wrapped in a dumpling skin...

    To those complaining about the size of the dumplings; Who are you, and who has hurt you?
    Those are not only the normal size for a dumpling to be, but in my house, they would be considered small. Really small. They're supposed to be like, thick, fluffy clouds in your soup. You're supposed to scoop off some dumpling and scoop up some chicken and broth, and then eat it together.

    Whenever I’ve made dumplings like these, they end up doughy and bland. I always gotta add egg to mine, gives it a much better taste and cooks more evenly

    Just made this for dinner since we had nothing else thawed out lolI made a few adjustments to the recipe, but it turned out great ouo' Adjustments I've done were: Marinating the chicken 20 mins prior to cookingAdding celery along to the onion and carrotsSubstituted heavy cream with evaporated (condensed) milk (it came out just as creamy)Added cilantro, lemon pepper, and oregano seasoning along with the thyme and bay leavesHalved the amount of flour of the dumpling balls Added some lemon pepper to the dumpling balls and also made them with evaporated milk.Made the dumplings much smaller so they would cook better. Cooked them for about 25 mins and also covered the lid with a big piece of napkin (Spanish trick so they cook inside better )All in all, great meal ✨

    Couple of odd things. Frozen peas don't need to cook for 15 minutes, 2 minutes max. Also, parsley should be added at the end. The dumplings looked a very heavy. I use a drop dumpling method, drop by tablespoon not shaped. You don't want to over mix them or you end up with dense golf balls.

    Don't do the dumpling thing. Legit just a lump of dough. Instead make it with a filling, like with mince chicken, or even a vegetable one. It makes the experience a lot better. No one wants a mouth full of just dough

      IfYouReadThisUsernameYouSmellLikeAButt wtf. no. have you ever heard of chinese dumplings? japanese gyoza? korean mandu? plus countless more. ravioli is flat with less dough and filling. it's a pasta. dumplings are balls with a lot of filling, that can be cooked fried, steamed, boiled etc. don't ruin the definition of 'dumpling' just because you don't agree. (see how i didn't insult you?)

      The size of the dumplings and the level of heat coupled with the fact that the baking powder made the flour "lighter"....if you will.....makes it possible but it's my opinion that dumplings ought to be slightly chewy. This dish is good. I'm gonna try it out!

    My interpretation; Just the soup part:
    Chicken Soup
    2 tbsp veg oil in bowl
    Add 2lbs chopped chicken, mix; cook
    1 cup carrot
    1 cup onion
    3 garlic cloves
    Sauté carrots, onion; cloves
    Add to pot:
    5 tbsp butter
    6 tbsp flour
    Mix flour in and melt butter then add chicken
    Add 6 cups chicken broth
    1/2 cup heavy cream
    1/2 tsp thyme
    2 bay leaves
    Bring to boil then add frozen peas
    Simmer 15 min

    My mom's chicken & dumplings were like this. She used Bisquick, milk, melted butter, s&p and fresh chopped parsley in hers. The dough that has contact with the broth sort of melts into the liquid and adds some thickening. They steam and are usually light & fluffy inside. Hers had onions, peas & carrots too.

    Made this last week and turned out really good. I'll enjoy doing making it again throughout the winter months. As well as the chicken noodle soup recipe they posted today.

      I like my dumplings smaller. I suppose it's fine either way but I think more smaller dumplings make the soup a little richer since the exterior of the dumplings cook into the soup. My wife and lots of people use canned biscuit dough instead of making the dumplings from scratch. I think it's easy enough that there isn't any need for it.

    Made this for Sunday dinner with a side of green beans. Whole family loved it. The dumplings turned out well. It was a surprisingly beautiful dish considering how simple it is.

      +lilypippily because places outside of Asia don't know how to cook traditional dumplings properly so just roll balls of dough, brand it 'dumplings' and think it's delicious because they've not had any better

      As a Jamaican, our dumplings are just water and flour. A lot of our food come out of necessity or not wanting to waste anything. A lot of things being extremely simple. For instance we even have a drink make from the boiled rinds of pinapples among other things. We either eat it by itself or in soup like so. It's not as bad as you think, not even in the slightest, though I'm assuming you have never had it. (if anything I haven't met many people if any who hate Jamaican food). Also, lily, while it is true some haven't had any better, You speak as if we or any other person is claiming there's as the best or insulting your dumplings. If anything I bet they would enjoy your dumplings.

    This is by far a favorite dinner for our family! I just reduce the heavy cream by about a table spoon in the dumplings so they're flaky like pie crust. They cook more evenly and aren't doughy.

    I just made this and I'm am pleased! It turned out so good! Instead of cutting my chicken into cubes, it was cooked then pulled apart (shredded chicken).

    Just made this recipe and I have to say, it was great. I just added a little more salt, and a bit of chardonnay (for acidity). The dumplings were so easy and perfect. I also added celery with the onion and carrots (and a few bits of bacon to saute it all in, I mean, everything is better with bacon, right?) It was an easy crowd pleaser. Oh, and I used leftover roasted chicken from the night before so the chicken was very good because it had been seasoned and roasted the day before. :)

    I love chicken and dumplings buy this is a really gross recipe. You don't just throw together flour and put it in the soup, you make *buttermilk biscuits*, then you put it in the soup. Smh.

    Am I the only one that absolutely hates thyme? If I'm ever using someone else's recipe to make something and it calls for thyme, I omit it entirely. I feel like even the smallest amount overpowers the dish and the smell and flavor of it is so unappetizing to me. To be honest, the same goes to bay leaves, but I don't feel quite as strongly about those. I just omit those as well.

      When a traditional delicacy from one country is taken and changed completely but claimed it's the same. These "dumplings" are balls of dough. Call it what it is. They don't always have to be filled, but if you're going to call it a 'dumpling' then make sure of it's origins and what is it. If it isn't filled, it's not a dumpling.

    this is american chicken and dumplings lol. where i grew up here in the south of the US, right next to texas!! although admittedly the dumplings are HUGE in this version lol i love both asian dumplings and american dumplings with a passion, and these are never filled, but my beloved asian dumplings are your standard soup dumpling and takes a hell of a lot more work, but their worth it! and are a COMPLETELY different process, so i see why some folk might be a bit confused. dumplings are different in every creed, and we do a version of this without the ice cream scoop called drop dumplings. where you make the dough all in one bowl, then take a rather large pinch of the dough and just drop them into the boiling soup one at a time, so they dont stick together. the whole pot and every bite is full of them. but you dont eat them right away, they'd be dry in the middle! once the pot is cool, you set it in the fridge overnight, and eat it the dinner or the whole day after! american chicken and dumplings are best when they sit overnight, or for a full 12 hours at least! they made it fancy here, all you need is salt and a fair amount of fresh cracked black pepper if its up to me.

    This is really a tasty soup but I think I will go back to the dumplings I normally put into my chicken soup, the way my mother taught me. Flour, egg, salt and pepper and a little of the rendered fat. Really light airy dumplings. The recipe for the dumplings I followed above were too dense for my taste.

    Lol those boiled doughs are called doughboys. You can normally boil them with a pot of pork bones and watercress, served with potato and kumara. It's kind of like a traditional food in New Zealand; called boil-up. And I'll tell you now- you're lucky to get even 4 doughboys when being served only because there's like another 10 kids to also serve.

      +Ben Griffin she's Chinese. Dumplings ORIGINATED from China 1,800+ years ago in the Eastern Han Dynasty. Just because it's all you've known doesn't mean it's the same as the original, and REAL traditional dish born in China. I think she knows what she's talking about.

    For people who don't understand the dumplings, these are English dumplings. Yes, it's a big ball of dough. The dumplings double in size because of the baking powder which makes them full of tiny holes inside, like bread after it's been left to rise, which give them a really light texture. As they cook they absorb the flavour of what they are steamed in. You can also add fresh herbs to the dumplings if you want.
    Calling them "balls of dough" is an understatement to what they end up as. It's like calling a pie made with puff pastry a "big ball of stuffed dough".
    If you don't know what they taste like, buy a packet and try, they're delicious. Here's some, but they're really expensive for what they are. Usually you can get a box for £1 in a shop.
