I didn’t hear you discuss proper orientation of the GoPro, since - as I understand it, to get a full 360 degree circle, you need to be pointed at the North Star in the Northern Hemisphere.
Orientation of your GoPro is up to you as to direction. The GoPro will automatically level the image if you’re slightly off balance, but as to what star trails you want is up to you. Towards the north for the spirals, toward the south for side to side or east/west for different directional stars. It’s totally up to your application.

I'm just getting one photo at the end with star trails. How do I get the individual photos? I want to see them move. GoPro12
You only get the final image and a video of the stacked images to show the movement :)
