  • ▣ Chocolate Macarons Recipe|Ohyoo Cooking
    ▣ Ingredients:
    Almond powder 55g
    Powdered sugar 60g
    Cocoa powder 6g
    Egg white 50g
    Sugar 45g
    Dark chocolate 80g
    Corn syrup 10g
    Heavy cream 80g
    Cointreau 5g
    ▣ Baking:
    150°C/302°F 15min
    ▣ Method:
    1.Sift almond powder, powdered sugar and cocoa powder twice.
    2.Beat the egg white, add sugar in three times, beat until stiff foam, mix with the powder in step 1, press and mix properly, then put it into a laminating bag (round laminating nozzle).
    3. Squeeze the right size on a silicone baking mat, lightly knock a few times to make the batter flat, with air bubbles can be broken with a toothpick.
    4. Dry the skin at room temperature, if the indoor humidity is high, this step can be used in the oven (35℃/95°F), dry until the skin does not stick to the touch after baking, home oven recommended to use the hot air function.
    5. Remove from oven and let cool completely before removing.
    6. To make the ganache filling, add hot cream and corn syrup (50°C-60°C/122-140°F) to the melted chocolate, stir well.
    7. Refrigerate the chocolate ganache for a while, let it solidify a bit, squeeze it on the baked crust and recommend to seal and refrigerate it overnight before serving.

    It was my first time making these and my macaron shells came out smooth! It have a nice soft chew. And i'm glad it didn't take long to make!

      why don't the macarons I made dry even though I put them under the fan for a long time? Do you know how to solve this problem?

      @@putrinabillaaleyabintimohd8819 maybe the environment is too humid. You may turn on the dehumidifier ,fan or air conditioner to get it dry.

    I am 68 years old... and have had a Restaurant, cooked for 50 years... and Never tried to make Macarons because I thought it was too hard to do... so I pay (USD) $9.00 for 12 macarons, which I love... but too costly...
    NOW... after SEEING this GREAT Video... I will try to make them

      Ingredients are still a bit costly but nowhere near 10 dollars! You also can pick up a desired ready made frost to pinch out any unnecessary hassle! All for the joy of that bite.. that significant bite.. wholesome bite! 😌Mmm..

    I find these videos so useful and also pleasing to watch. I get that it’s supposed to be ASMR (and most ASMR videos with the whispering and crinkling also make my skin crawl) They look amazing. they look perfect 😮 and that macron age looks good too. Love From Planet Ayurveda.

    Very good recipe, I made it on the first try! Not having to add any food coloring makes it way more stable for me, the cocoa powder adds the nice color and flavor without disturbing the mixture! 👍 will be making again!!

    Very nice !
    Your ganache seems a little bit dry though, I rekon it can be improved by heating the heavy cream and melting your chocolate with it instead of using a microwave. In my bakery courses we were forbidden to use thoses hahaha.

      Melting chocolate over boiling water is always the way to go. The chocolate is so smooth and silky

    I tried this recipe today and mine got cracked on top (thats partially my fault, didn’t let them dry enough it’s quite humid today) and some got lopsided somehow. This was the first time incorporating cocoa powder for me and i‘m sad it didn’t quite work out for me 😅 guess I have to try again

      Thank you for liking it! This silicone mat can be found in the baking material shop, 42*30cm(L*W), the inner circle of macarons is 3.5cm in diameter and the outer circle is 5cm in diameter, I hope you can find it according to this specification.

      I think there is no harm in using it since it will definitely keep the shape of the cookies. And if you don’t have it on hand you may add half a teaspoon lemon juice for every single egg white. The acid will work its wonder in forming tiny bubbles holding onto each other resulting in very fine texture.
      I don’t know why you got a “No” for an answer here though. I hope that they explain!

      I think you should only use the below heat, like on a normal oven. Usually when we turn the top burners on it overcooks or burns the tops of things.

      I assume it's with fan. I've never seen a macaron video that didn't use a convection oven with the fan on.
