FRENCH BEANS SABZI
Ingredients
10-12 French beans, stringed and chopped
2 tablespoons oil
1 teaspoon mustard seeds
1 teaspoon cumin seeds
½ teaspoon asafoetida
2 green chillies, roughly chopped
1 medium onion, chopped
½ teaspoon turmeric powder
Salt to taste
1 teaspoon sugar
3 tablespoons scraped fresh coconut + for garnishing
Method
1. Heat oil in a non-stick pan, add mustard seeds and let them
splutter. Add cumin seeds, asafetida and green chillies and
sauté for half a minute. Add onion and turmeric powder and
sauté for two minutes.
2. Add French beans and sauté. Reduce heat, cover and cook for
two to three minutes.
3. Open lid, add salt and sugar and mix well. Cover again and
cook till the French beans are tender.
4. Add coconut and mix well and switch of heat.
5. Transfer into a serving dish, garnish with coconut and serve
hot as a side dish.

Sabzi - Veggie dish
coconut flakes - fresh is best. Crack open a coconut, drain liquid. Smash on hard concrete ground. Remove and rinse pieces. Chop and shred inside a food chopper. Store in freezer to use when needed. Don't bother taking off brown skin - adds fiber to your meal.
Black mustard seed - Rai in Hindi - should always be put into hot oil first, so they split open and flavor the oil.
Whole cumin seeds - Jeera in Hindi. Needs to roast to flavor the oil.
Asafoetida or Hing in Hindi - this is the resin from the root of a Fennel like plant. It is sold either as a chunk or powdered. It gives off a distinctive sulphuric smell. This is why the Latin name means Fetid! Very typical of South Indian dishes. It is always added to lentils or bean dishes as a digestive aid for your stomach. It helps break down lentils for digestion. Must always be roasted in oil, but put in last as it burns easily.
Green chilis or Hari Mirch in Hindi - full of Vit C. The capsain in it opens up blood vessels and makes you sweat to cool down on hot days. If you don't want it spicy hot, split them open and remove all seeds before using. Reduces heat by tenfold!
Red or Yellow Onions chopped - when you saute this, it becomes caramelized and adds a sweet flavor to dish. Pretty standard for all Indian veggie dishes.
Turmeric or Haldi in Hindi - prevents spoilage of lentils and beans. It is a potent germicide. Always needs roasting, but burns if too dry, so mix with water or add to moist pan.
I would also add some curry leaves if you want an authentic South Indian flavor and some long red whole chilis or Kashmiri mirch.
For variation, use tomatoes instead of coconut.
We Maharashtrian also do the same way.

yes ... indeed !! I dont have access to fresh scraped coconut always, so I keep dry coconut (unsweetened) flakes; it works well too !!
