I can’t speak for all of Taiwan because we only went to Taipei but it’s one of our fave cities in Asia and we definitely will be back again to explore more of the country! Any solid dates/times set to visit?

It spring onion pancake. Some local will like have it as breakfast.. And the taiwan braised pork belly rice really nice too. Bubble tea something won't miss it while in Taiwan.. Night street market chicken cutlet etc
It’s easy for you to pay NT 1000 bill . You could buy the MRT ticket or easy card at service booth . Easy card could pay the bus , MRT , food and convenient store payment and so on.
