As others have pointed out, the first opening is from the original uncompleted Hellsing anime adaption (Ultimate is the completed remake). The second opening is fan made using the music from the Shiki anime opening (a horror anime you definitely need to check out).

Hellsing started to air prior to the source material finishing, so the animators went drastically off the plot line to finish the anime. Hellsing ultimate was a remake to follow the original plot. As it was a series of OVAs over several years it doesn't really have an opening like an amine show

Luke, Hellsing is to Hellsing ultimate what Full Metal Alchemist is for FMA : Brotherhood. They started the anime before the source material ended so they reboot them afterwards because the first adaptation didn't followed the actual story.
The ending for Hellsing is interesting because it's sung by Mr. Big, who was a one hit wonder band in America, but went on to have a pretty decent career in Japan.
Hellsing TV series 2001 was the first adaptation and hellsing Ultimate was the remake, like FMA and FMAB. That ED is a fanmade. If you're looking for a mecha anime you should start with a classic like Gunbuster, it's more of a turning point for anime in general starting or reinventing a lot of anime tropes that still stand today and being the blueprint for Neon Genesis Evangelion.

The first OP is from the TV series and the second looks like from the OVA. Personally, I like the tone and pace of the 2001 version better, but the OVA follows the original manga story more closely.

If you liked Hellsing Ultimate you should try watching Drifters, it's from the same author and has the same artstyle and quality, it's so intense and well paced and the action is top notch, on top of having a banger of an opening, I highly recommend you check it out.

I would personally vouch for watching Hellsing Ultimate Abridged before watching the original Hellsing (assuming I'm correct that you've only seen Hellsing Ultimate so far). Watching the Abridged series while Ultimate is still fresh would be better than you trying to recall vague memories of how these characters were originally written.

hellsing was in a similar situation to the original fullmetal alchemist: they started airing at the same time as the manga was being published and halfway through they caught up to the manga and the story became anime only for the second half. hellsing ultimate is the fullmetal alchemist brotherhood equivalent, created years after the original anime and after the manga finished publishing so the whole anime story is faithful to the manga.
hellsing ultimate abriged is a hood classic. fair warning it is a bit outdated (there is an unfortunate use of a slur) but other then that its really good.

Hellsing Ultimate had many different endings. My favorite is from OVA episode 7. Suilen - Shintou Shite. I totally recommend you check it out.
You might not have liked the main series, but I think you should seriously check out the Abridged Series from Team Four Star. IT IS AMAZING!
