Squad sergeant is just a dude with a whip, but everything else is some weird animal / webway creature that they've tamed and send into battle as combat heavies. Your stagehand idea would make good heavy weapons guys, or (if we're already using musicians for that) forward-deploying stealth troops in the style of Kabuki stagehands, complete with "ninja" gear.

Tyranids: Just like in the video, a larger Carnifex-type unit that acts as a knight equivalent. Bonus points if it copies an Ork trait from being based on Ork DNA harvested from the Octarius War.
Daemons: More Chaos Undivided daemons, like some sort of troops unit. Bonus points if it fits with the Ruinstorm Daemons aesthetic so it can be used as lesser daemons in Heresy, too.
CSM: Do Chaos relic terminators (maybe as an upgrade pack that adds spikes and tusks to Cataphractii and Tartaros terminators) count? If yes, then those, if not then some kind of Chaos apothecary (the Death Guard can't be the only ones who still make use of them).
Death Guard: Is it cheating to ask for Warpsmiths? Maybe a special Death Guard version that fits with their aesthetic?
Thousand Sons: A Rubric Dreadnought (like the old metal one but with the "all is dust" rule so we don't have to rely on only Helbrutes.

Who can literally ask the Chaotic deity of knowledge, complexity and scheming.

For quite a long while Chaos armies didn't get Jump infantry or (mechanical) skimmers. The rulebooks put it down to them being able to repair that tech 'on the road'.

So when you got to the chaos section, there's a few things that might make you happy/mad/salty. For one, in old epic 40k there were all those Knights you've listed; the slaaneshi one kinda looks like a seeker/crab hybrid called the subjugator (and may have had a model from Armorcast). Chaos Knights being all sorts of warp-spawned monstrosities was totally a thing back then.
The Sonic Dreadnought you guys mentioned was a model made sometime in the mid 2000's, not 90's. However, the rules for Sonic Vehicles did exist and this is where Eric is going to die a little on the inside; Sonic Weapons use to just replace existing weapons on other vehicles, namely Autocannons can be replaced with Blastmasters, Heavy Bolters into Sonic Blasters, and Flamers/heavy flamers into Doom Sirens. This conversion, however, had to be depicted, so the FW dread was more made as a "I want to pay money to skip this conversion" type of deal that later had to get it's own rules because this option disappeared. This also means that, yes, you could take a Predator armed with a Blastmaster and Sonic Blasters, Noise Havocs with 4 Blastmasters in the HS choice, and Noise Terminators (among others). Weirdly, the Defiler is the only one who can't be upgraded this way despite having Heavy Bolters and Reaper Autocannons as options.
That big "fuckoff" dread thing Brad wants, potentially from the Word Bearers with oldass dreadnoughts? Mhara Gal (so I guess this technically means he violated his own rule?)
Tsons: There was a popular conversion back in older edition where you just have a sorceror conjuring weapons as an obliterator. That kinda sounds like what you want, except they're the rubric terminators with weapons instead of a sorceror throwing magic plasma shots.
World Eaters: How did you remember the blightlords on bloatfly for deathguard but blank on Skullcrushers for World Eaters?
EDIT: I said Eric wanted the big f-off dread when it was Brad. Sorry.

But its main purpose is that it would carry this crate that when dropped enemy units could take damage, but it could contain some troops, or it would just be a bunch of explosives. Maybe you could also make the kit into a second wrecking ball unit.

It's not exactly melee grim reapers, but the striking scorpions do kinda do what Erik wants, in that they're a little out there thematically and also are melee focused troops. Just that they're predators and not grim reapers.
But ya, craftworld has the issue (?) of just having every role kinda covered already. And it's literally written in their lore- they pursue and perfect ever form of combat. I just wish some of these options were updated...
Anyways, for unit types I think the eldar could use in the current line up, there are two missing at the moment imo.
One of them is a massive attack/transport flyer, but this one's kinda breaking rule 1. Because in lore and at some point in the past, the vampire hunter/raider existed which is a really cool flying model. The raider was a transport, kinda the equivalent of a thunderhawk. The hunter was a ground attack aircraft designed to blast titans to smithereens, like a ax1 tigershark but WAY BIGGER. Like, these would definitely be lord of war options. It's just that neither of these have a model or a datasheet in the current edition I think.
The other option I really would like is a generic hq option that's right between an autarch and a farseer. Like a souped up warlock. Make it a highwarlock or something. I know it's honestly kinda redundant from a gameplay perspective but I just think it'd be really cool.
Also if I'm allowed to break rule 2 for just this- in lore it turns out shards of the other gods besides khaine are also kinda just... Floating about here and there, out of the grasp of Slaanesh. Eldrad had one of morag hei with him, apparently. So seeing avatars of the other gods, or people possessed by the avatars of the other gods would be pretty cool. Like, kurnous could be a less tanky but much quicker avatar than khaine with very powerful ranged attacks instead of melee. Or best of all, an avatar of asuruyan with such massively powerful psychic abilities that it would make Magnus look like a bitch and humble him down for once (please don't hurt me Brad).

I want a Slaaneshi Noise Marine Dreadnought character which is so ancient & deformed that it looks like a cross between a wolf spider and a blue ring octopus. Cthulhu-esque melee oriented with terrifying spider eyes, tentacles & fangs, and a pair of large membranes that serve as a pair of twin-linked heavy doom sirens on steroids.

    Great video idea.
Tau you got it - sword gundams. Votann just need more.
One of the old Imperial armour books let you create your own biotitans for Tyranids. Had some great rule options too - I want an update to that ideally with an ork/krork option in it too.
Genestealers just need a bigger points cost useful unit. Something to make the army cheaper to collect. The missiles make sense or you could have a biovore style cannon on a new vehicle. like its a hidden biovore.
I like the Necron canoptek troop idea. I also like the Deathguard bloatdrone fast attack.
Eldar and Dark Eldar just need more consideration as to where they are headed. Both could do with something that is basically a way for them to fight without putting their lives/souls at risk so some form of automated things or vehicles makes sense.
For Harlequins a troop choice called the audience that is resilient, resistant, brute force but cheap and dumb. The models can be made of every race type but they kind of work like skavenslaves in the Warhammer the old world stuff - basically various species/people that have followed them after watching a performance.
A new better sonic dread that is a dreadnought playing massive drums! and bring back the other naughty elements of Slannesh - where is their champion pumping "stimms". I think Thousand Sons need a slow and purposeful style vehicle so just give them access to Baneblades - mostly because I want to see a chaos Egyptian Baneblade or titan tank.
Sisters should have a choir unit that drops down in a dropchurch and gives out wide ranging buffs/debuffs but is otherwise terrible at combat.
Custodes should push more into the blackships lore for sisters of silence - there have to be way more sisters of silence to work on the blackships so we should see way more variants of them. More specialties with less gold armour and great links to the sisters of battle and inquisition.
Imperial guard - I want to do a full bullgryn regiment so a way to run them as a troop choice or fill a leader role would be nice. Just think of an Ogryn commander yelling dumb orders all related to moving and getting stuck in to combat. Ideally to a bunch of Ogryns, conscripts and possibly death korps. A full imperial guard melee regiment to face off against the Ork equivalent.
Grey knights are meant to go against giant massive world sized demons and also swarms of demons - they have nothing to deal with either of those problems. Sure want to take out an elite or HQ that is easy but they really need a way to deal with numbers or with knight or titan models. Truthfully the land raider probably just needs to be good but I wouldn't mind a grey knights exclusive vehicle that deals with either of those problems. Maybe a Grey Knights Knight model because why would they be called that otherwise.
Imperial knights - Your idea is great! Just think ... a knight on hoverskates!
Space marines get enough already so anything I say will just be a complaint about something they already have. Maybe a weaker cheaper chaff unit that is a genuine throw away unit.
All that and the best till last, a new faction - The Old Ones leading the Exodites. I want Frogs/Toads leading dinosaur riding Aeldari wood elf equivalents.
Thanks for the great ideas guys!

I don't know... I think adding even more mechs to Tau really only enforces the same playstyle, adds more unnecessary options (where none is really neeeded) and doesn't really solve the issue of their one-dimensional playstyle. Making things bigger and grander also feels kinda impractical and ressource demanding, which the Tau really are not. And while cool, melee focussed mechas would not make a lot of sense lore wise. It kinda seems to go against their whole doctrine of designing warfare, which keeps their losses to a minimum, by maintaning distance to their enemies. Perhaps something along the line of an elite melee focussed cadre, which serves under Farsight or perhaps shock field drones, but not more than that.
I'd rather see GW expand more on the Tau's pool of auxilliaries. Next to giant Mechas, this is what got me into Tau in the first place. That they did not merely subjugate other races but tried to integrate them into their army, allowing them to shore up their weaknesses in ways, which other factions could not.
Kroots have War spheres, so why not some sort of ramshackle vehicle option, ala Mad Max, which fuses their own stuff with jury-rigged Tau Tech? Wbu a melee Vespid unit, inspired by hornets (they are bee/fly like after all)? It is even said, that the Tau have this one client species, the Nicassar, which are all psychically gifted. I think those are much more interesting avenues, which GW could explore

37:00 First thought was knife thrower. You could do melee without having to be right up next to your opponent's models that way, make it super short range but still get some space right there.
Also for my own Harlequin army I really wanted a wraithknight because I think they're cool so thats getting a harlequin paint scheme
