On a family vacation to Wisconsin, we stopped by one of these places, and that's where I discovered my lifelong love for ridiculously aged cheddar (I was around 10 years old and was eating 30 year old cheddar 😄) and cheeses with penicillin molds

I'm really glad you started this series. Didn't know how much this channel needed a series like this until now. If you still are looking for more locations, the Illinois River Valley has a lot of good restaurants in the area (though it is a bit farther from Chicago proper than I'd assume is desired.) Although I've never had a Polish Sausage from Bobaluk's in Marseilles, my father swears by them. Tone's Doghouse in Ottawa also has very good hotdogs and stuff in that vein.
I've been constantly passing this since I was a kid. I always wondered what it would be like to go there. Maybe I'll take a quick commute later. Thank you for being my taste tester for my locals
Well...if you are gonna go to Wisconsin, you should stop an exit or so sooner and hit up the Brat Stop. Kind of a dive bar type place, but also does good sausage. They have an appetizer literally called "the sausage party". Also, great cheese curds. Pretzel is pretty good too. The sausage and beer is where it is at though. Lots of great ones on tap.

Fun fact about Mars Cheese Castle as someone who's lived his whole 28 years (so far) in this town. When I was little. Mars Cheese Castle was a run down, almost abandoned gas station looking building. It's highway sign was always practically falling apart. It was actually within the last decade that they tore the old building down to build the castle. My dad always told me never to eat there, unless I felt like getting sick. As with most the restaurants in that little area.
As a Wisconsin resident, I rather love this place. You really got the nail on the head with this one. There's certainly better places for beer, cheese, or sausage, but it supplies well on all three categories.
Was a firefighter in Wisconsin for a while, there's a place called "Bavaria sausage" in fitchburg, a few blocks from old station 2. That place used to catch fire annually, but they do make mean sausages and have huge smokers on site. They'd process deer for hunters during hunting season and one year my coworkers had them cut a sausage with lamb fat (can't eat pork) and it was the finest sausage I ever had.

If you ever get a chance to come to the east coast, in my little home state of Delaware, there is a place called Helen's Sausage House. It opens up at around 4am and closes at noon every day but Sunday, and there will be lines out the door almost every day. The reason is simple: the sausages are divine. Highly recommend if you're ever in this area.

If you're going outside the Chicago area, may I suggest visiting Pella, Iowa and trying some Pella Bologna, a.k.a., Rookworst? There are two delis that have made their own for generations: Ulrich's and Int Veld's. Some non-sausage locations of interest of interest would include Jaarsma's Bakery, home of the world-famous Dutch Letter almond pastry and the Frisian Farms Cheese House.

If anyone is in the Albuquerque area, I recommend you try the Dog House drive in on Central Ave. The unique part about it is that the waiter/waitress takes your order from your car and delivers it to your car. It's reminiscent of a 1950s diner experience
Last time I was in Wisconsin, I spent about $60 on sausages, beef jerky and sticks. They really have some great meats up there in addition to the cheese they're known for.

You need to visit Kuby's Sausage House in Dallas, TX! They make like 20 different sausages in-house, including the best bauern brats, knackwurst, and weisswurst I've ever had.

Brandon Meats makes sausages in Wisconsin and is famous in the area . They don't cook them there so you'd have to fry them up in the Sausage cave but I'd highly recommend

'Old Germantown' in a suburb of Milwaukee has a home made 5 sausage sampler platter. It's a mom and pop place and I'm sure you'd love it!
