What's your favorite fish to make fish dip with? In this fishing catch and cook episode we turn a kingfish into fresh smoked fish dip. It's not that hard and you can do it too! Next time you catch a kingfish put him in the smoker
For mayo, you need to get a stick blender (immersion blender). 3 egg yolks, one full egg, extra virgin olive oil, lemon or vinegar to taste, salt to taste. Just mix all ingredients, blend eggs with stick blender while drizzling extra virgin olive oil in it. When it gets to the consistency you like, you're done. Easy peasy. We stopped buying mayo when they started adding bio-engineered ingredients.
This dude gave you the best advice. I was about to say the same thing. Make your own mayo, it's really easy to do.

Any oily fish smoked has the best taste. I've smoked some pretty trashy fish and they were excellent smoked.
Smoked bluefish, smoked salmon, sardines, herring... never had barracuda.

That smoked fish looks amazing. Mayonnaise is easy to make. You just need fresh eggs, whatever kind of oil you want to use, vinegar and lemon or lime juice, salt and whatever else you might want to season it with. (Unless you use it in baking, fresh black pepper is great in mayonnaise.) You can sub tofu for the eggs also. I've made both kinds, but honestly like the taste of Hellman's or Kraft better.

You went our of north Chanel penny camp by the sunken ship? I remember actually fishing on it in the 90s you could even pitch a tent on it back in the day now it's falling apart passed by there a few weeks ago.. I fish the carrys fort area out of there

Nice work! One tip on the fish dip..let it dry for a few hours after you brine it so you get the pellicle before you smoke it. You’ll get a better smoke flavor

@@Stan_LIn my experience there are two main reasons:
1) Saltwater fish’s cells and tissues are adapted to maintain their integrity in saltwater. So soaking in freshwater throws that off and causes the tissues to breakdown and lose integrity taste, etc.
2) I stopped rinsing fish, even freshwater fish, in tap water period until RIGHT before I cook them because of the bleach in tap water will start to breakdown the tissue. I’ve found rinsing any fish in tap water and then bagging it up to store in either fridge or freezer it just doesn’t stay good as long
