Amazing Edible Art Stone Crab Bon Bons - Never Done Before

- Stone Crab season is upon us; it's from October 15 to May 15 and if you don't catch some during this time, you'll have to wait till next season to enjoy them!
Master Sushi Chef Hiroyuki Terada makes a couple of Stone Crab Bon Bons with a NoVe twist. Instead of using the regular mustard dipping sauce, he uses a wasabi mayo mix with caviar and then covers it up with Hass avocado and tops it off with ikura and 24K gold flakes. These little creations are amazing with all the different flavors coming together.
These bon bons don't come at a cheap price though. They're the jumbo size and sell for $90 a pound which is 3 claws, or $30 a claw. It takes 1 claw to make one bon bon so if you'd like to enjoy one, please give us at least a 24 hour notice so we can bring in the freshest stone crabs around.

About Master Sushi Chef Hiroyuki Terada:
Master Sushi Chef Hiroyuki Terada is one of the top Japanese Chefs in the entire world and the most popular Japanese chef on RUclips.
At age 10, Terada learned the basics of sushi from his father and then went on to attend RKC Chef's School in Kochi, Japan from 1987-1989. Chef Hiroyuki Terada is using the Minonokuni Matsu-1573 210mm Yanagi. Super Blue Steel. Can also be used for breaking down whole fish and chickens. But normally for slicing, sashimi, vegetables, meat etc.. This is Chef Hiro's custom specked knife.

Didn´t bother me, just that gold flakes and salmon egg, although fancy pancy stuff, feels a bit tacky in endless repeat.
What a true artist! Wow!
Exceptional. We worked it up as flash fry tempura coating for crunchy. And final touch was balsamic glaze comet to mimic the less than delicate claw chunk. So yummy.
This guy is one sick chef..amazing!! I hope I'll be somehow close to his skills some day.. Cnt get enough of his creativity .. GREAT JOB !!

I'm still in awe of Master Chef Hiro, watching him make sushi, is like watching Michael Jordan dunk a basketball, Effortless. I do have one question though, how would you fit all of that into your mouth? It's huge.
I’m so excited to see how these are made. A restaurant near me would make one larger one and called it a dragon egg but they took it off their menu. It was so yummy and the texture was amazing. I’m glad to know how they made such beautiful effects but it makes me miss it all the more.

The humming is because the camera microphone you use has a built in equalizer. When there is no loud sound, it will change the amount of sound it takes in until it meets a certain decibel. When you start talking, the humming will be more quiet because it re-adjusts itself.
You can get rid of the hum by either toying with the camera settings and seeing if there is a manual volume control, or by downloading a program like Audacity or Adobe Audition and using the noise cancellation features with them. Adobe Audition is a "paid" program, but much better than audacity.
If I ever go to Florida, I'm definitely visiting you guys.

Only in my dreams. :) I'll have to use jumbo lump grab and powered wasabi. It won't be nearly as authentic as your recipe but I am inspired so I wanted to try to replicate with the ingredients I have on hand.

Don Hey Avacado is very important in Japanese cooking and sushi. Besides there is no other ingredient or vegetable that looks better or can mold/bend like an Avacado. But like I said, every single sushi place uses Avacado a lot, it's not just Hiro. It's very important in Japanese cuisine.
