it's not impossible but very rare. I have seen some half-Korean kids get grey/blue eyes but they turn into hazel later on

Idk if this makes sense but I feel like because Sam is patient and doesn't scold his children that's why they are smart and creative. A kid can be smart and did what William did but he wouldn't do so if his parents were scary and scolds him for every little thing. I think that's why William gets to be creative and able to express what he feels and thinks.

Gunhoo is actively learning 2-3 languages simultaneously, while Ben is passively learning english with korean being his main. Its not fair to compare them both.
