Actually, he was in the original release *_much_* more frequently than in SA2:Battle (in the Dreamcast version, basically any in-engine cutscene could have him appear if you press the right buttons, whereas in the rerelease, only a few of those cutscene appearances were left in.

Snapcube's work has become legendary among the fandom! All of the fandubs, plus the Sonic Destruction fanfic, are worthwhile watches!
Also, since you finished SA2 and the hype for the third movie is at a all-time high, I'd love if you checked out one of my suggestions of creators to watch from a while back: JoaoFilipeSantiago, and his award-winning fanfilm(Not joking, it actually won best VFX at this year's TINFFestival), Project Shadow. The movie is a beautiful adaptation of Shadow's origin, with top-notch visual effects, a killer original soundtrack that includes unused tracks from Shadow's game, wonderful acting, both in the original Brazilian version and the official English dub.
(Other fanworks like the Shorts from Sonic Paradox, Nazo Unleashed by Chakra X, Seasons 2 and 3 of Sonic Stop Motion Adventures by Piplupfan77, Sonic What If by Sega Scourge, and pretty much anything from Balena Productions and RandomGoonVO are also prime for reactions for a eager newcomer fan like you! That'd be awesome!)

If I had one recommendation for you to check out, (beyond the other Snapcube fandubs,) it would be RelaxAlax's video on Sonic Adventure 2, titled: "Okay, But This Is Still the Best 3D Sonic Game"
It's less of a beginning-to-end narrative like the fandubs, and rather an actual review. But it includes a story synopsis that I find even more quotable than the SA2 fandub.
