How to make “Kohakuto” Crystal Candy

- Today I’m gonna make candies which looks like real crystals. Those are Japanese traditional candies that cooled with “Kohakuto”. I hope you guys like it!
◆Ingredients
-Water 200ml
-Kanten 4g (or Agar 6g)
-Sugar 300g
-Lemon Juice 1tbsp
-Colored Syrup 1tbsp (or Food Color)
-Oil splash

So you can dry it in the fridge instead of in room temp after they’re cut and shaped??

Yes! you can😄But,the texture may be a little different. And, it may not be necessary to dry for a week. It'll probably be fine in a few days.
Can I use gelatin powder instead of agar agar
Unfortunately, gelatin is not suitable for Kohakuto. Maybe you can get agar agar on Amazon or Asian food store.

instead of waiting for a week, can you put it in a dehydrator ?

Yes, you do. But if you can’t get it, you can substitute it with Agar Agar👍

my syrup is super runny what do I do?
Maybe try reducing the amount of syrup.😉
Why does mine not set smooth? It's grainy and I can't figure out what I'm doing wrong 😢
Either not cooking your agar agar long enough or the sugar.
i dont have parchment paper any ideas on how i can dry it without that
You can use a wax paper or a silicone sheet😉You could also use a grid, but the “Kohakuto” might stick a little to it🤔
