I remember your blog from back in the day, as well as the crazy Dutch guy who did thebigfatundertaking. I also had a blog at the time and was mad enough to do Anjou Pigeon with Pickling Spices (I simplified the recipe and was still in the kitchen for two days solid). I did a host of other dishes from the book and the results genuinely blew me away. Sound of the Sea was an absolute fail when I tried it and having had it at The Fat Duck I don't think I missed out on too much. It's been a great trip down memory lane watching this video - i'm doing the Flaming Sorbet for Halloween on Tuesday as well.

It's very subjective but I think it's the best mix of recipes and cooking theory.

Historic Heston is a great read, and COMPLETELY up your alley! Shop around for a used copy bargain.
