Yeah it will cool down the water the only problem is you have no control how much it will cool the water over time the water will freeze and turn to ice
Also. When water freezes it freezes pure water first because it has higher freezing temperature. So the liquid water has higher percentage of minerals and other contaminates. That's one reason why ice cubes are so cloudy in the center. Because all the extras get pushed away from all 4 sides. And why directional freezing containers are bigger. Because their intention is to only freeze the purer water.
In theory this works, great that you did this. But maaaaan. You need a thermostat to regulate the temperature so that the compressor knows when to turn off to prevent damage and to also prevent the water becoming ice. Also that copper piping in direct contact with the water isn't ideal, overtime it will corrode the piping and that taste will get into the water. Lastly, I do hope what you installed was a high pressure switch (might've been a relay). Without a t-stat and high pressure switch/freeze stat, well all I can say is Murphy's Law.

Not recommendable for human consumption. You should at least separate the water from the coil by making a stainless reservoir and wrap the coil along with it so it will be safe.

Yeah I agree. He literally put it together exactly like the basic refrigeration diagram. No safeties or regulators. Without that, if something goes wrong, that will become a grenade waiting to explode.
with a little bit of modification you can convert this into air conditioning. Just put inline blower on top of the cooler through a cut out, cut another air supply vent out on opposite side of cooler and skip the water.
It is not i good designed due to contamination of water. I should be the evaporator cooling coil built in in the outside surface. It is very simple project.
