Homemade Noodles - Chicken Noodle Soup

  • Using what I have as many times over helps me feed my family with less upfront cost. A previous video shows how I boil 4 chickens, can the meat and the broth. I don't throw out the bones or skin though, in this video I show how I take those bones and skin, boil those, strain and allow to sit overnight in the fridge. The fat on the top I can skim off, the gelled broth is used for the soup.
    Making noodles is very simple. Because I was doing another heavy canning day I didn't take time to make fancy noodles - just simple little square noodles. Homemade noodles will swell up about twice as thick as you cut them. My family likes thick noodles - they like biting into a noodle and chewing it instead of having it fall apart in their mouth into a mushy substance. So I make mine thick.
    I show how to make the noodle dough, and how to roll the noodles out. As I continued to multi-task and show how to make the soup, one of my daughters finished the rest of the noodle dough for me and she made it much thicker than I do - she likes her noodles more like dumplings, LOL! So - you'll notice in the finished soup part of the video that those noodles are pretty darn thick! That's why ;)
    Making noodles is all about the consistency, and I hope I explained that well enough in the video.
    I have included garlic, parmesan cheese, red pepper flakes, and even Italian herbs in the noodle dough before and they turn out amazing! When you make it from scratch, you can embellish flavors and do anything you want to the noodles...
    One of the nice things about homemade noodles is you don't need to store boxes and packages of noodles on your shelf - you just need the flour. I store A LOT of flour because we cook and bake EVERYTHING from scratch. We eat low gluten flour which works for the diets of several of us, and it can sometimes be hard to find. So keep hundreds of pounds on hand allows us to bake or cook anything we want including noodles. We will never run out of noodles as long as we have flour.
    Rebekah's Noodle Recipe:
    6 cups flour
    12 egg yolks
    1/4 oil (any cooking type, non-flavored is best)
    2 tsp salt
    water (will vary, go for the consistency I mentioned)
    If you find your dough is too sticky, add flour 1 T at a time until it is the right consistency to roll out.
