Need to include the Desert museum, if your visiting thats among the top places you have to check out. Another mention or two would be Round 1 (which while they are a chain its still one of the best arcades in the region) west of downtown you have the Mercado San Augustine and MSA Annex with many shops, events, and places to eat/drink, related some restaurants I would throw out include Caruso's, Mi Nidito, Los Olivos, El Charro, daisy maes, and Silver Saddle.
For daytrip ideas we have caves with kartchner caverns being wheelchair accessible as well as biosphere two being a wonderful place to tour.

This was a very good video. Great videography and commentary. But it seems to mostly highlight the east side of Tucson and only makes brief mention of some real landmarks on the west side of town like the Desert Museum and Old Tucson. There's also the International Wildlife Museum, the Rodeo Grounds, 4th Avenue, and countless restaurants that can only be found in Tucson. I'm also not sure how well the airport fits into things to do while in Tucson though. I only go there when I have to :)

Check out the old Army Air Corps hangars along South Old Nogales Highway, if you can. B-17's, 25's and 29's all spent time in those buildings being fitted with weaponry before heading out overseas in WWII. I have a picture I would love to post here of seven 29's inside one of the hangars at the same time. They are immense inside.

And although we used to ride our dirtbikes out in the open area of Glendale where there is now a giant stadium, I still think the life was great. Want so badly to get out of Northern California. Just gotta find work and we're there.

I’m recovering from a back injury so I can’t do a lot of the physical activities in Arizona. Anyone have any advice for fun places to go for a 24 year old who can’t handle much walking?

If you visit Tucson, you need to visit the nearby gem Bisbee. And the biosphere north of Tucson. The downside is the Fentanyl Epidemic right now.
