Mario was always going to get the edge on texture and tenderness, firstly he used chicken thighs which don't have a tendency of drying out and secondly he used breadcrumbs and didn't dump his chicken in the sauce which allowed it to maintain crispness

Yep Mario had me with the oregano in the panko breading in egg, didnt even need to taste it, they're using the same chicken
I liked Mario's approach with the Panko crumbs, herbs and the lack of sauce. You can add the sauce to the pasta and place the chicken on top so it's not soggy. That said I would absolutely DEVOUR BOTH OF THEM cause I'm sure they're both "delish".

I think they were supposed to drain some of the olive oil and butter out after they cooked teh chicken, it was sooo much in the pot for Ree's recipe

Anything can be called "parmesan" if it is made in the style of Parma. It doesn't have to be about parmesan/parmigiana cheese.
As far as I understand its made in the style of Parma. For example Parmigiana di Melanzane is breaded (or not) slices of eggplant/aubergine, fried, layered with a tomato sauce, mozzarella and basil leaves, put in oven to bake/broil, parmesan is optional. My favourite vegetarian summer dish served with crusty bread. heaven.

if you going to smother the chicken in sauce you shouldn't bread it. There's always more than one way to make parmesan chicken you can have breaded parmesan chicken or you can have unbreaded parmesan chicken remember when you get ready to smother your chicken in sauce DON'T bread the chicken because you just going to have a mess if you going to breaded chicken finish it off by BAKEING it in the oven with a little tomato sauce on top and cheese .I prefer the unbreaded chicken parmesan you sauteed the chicken then you put in the sauce and cheese on top so delicious

I thought Ree's looked pretty good, but recipes with the word parmesan or parmigiana don't necessarily use that cheese. It also means "in the style of Parma".

I love Ree but for love of god you’ve taken the crispness right out of chicken parm with is sad 😩 and that’s a ton of just added oil for no reason! I feel like switching pans wouldn’t have killed anyone!
Not that I thought her trash food would win, but it seemed unfair to plate Ree's with pasta and Mario's on its own. I would totally use Mario's method except I would switch out the burrata for fresh mozzarella because I find burrata gross.
