That would be absolutly massive !!!
FYI the fermented fish sauce aka Plara can be made from different method and different type of fish/rice /salt that they mixed with it, also some recipe will mix it with Nampla(fish sauce), some will mix it with salt or soy sauce, grilled-grinded rice, etc. You will noticed by its color and smell that it's totally different. Right now we also have cooked fermented fish for a group of people who concerned of eating raw things.
Gary, I was finally able to order nam phla ra a few weeks ago, and it's a great accompaniment to any recipe with fish sauce (which I use for umami in most of what i cook, if I don't use shrimp paste or anchovies). The bottle I got was in plastic, so I transferred it to glass because the plastic was already getting soft, and it looks like the bottles they had in the video are the same brand which says its from Isan/the Northeast. I love it, and it's added to the flavor of everything I've used it in. Probably gonna order more soon. And its not just for som tum, although that's how they promote it.

Retired living 3 months year here and for last 2 months I have gone to each of your restaurants eg today Thonburi for Salampao but the Chicken OP lady did not open so off to your reco the happiest noodle shop on Charoen Krung ! He is so proud of you and your video you sit down he shows every customer . We watch all your passionate videos wish you best of luck and hope you stay and that your son is going to be bilingual bi cultural. He will be super prepared for the new Global world with bi culture /language. As you know how hard Thai is to learn once you are older. All the best . Your gut is right the West is history for living the future is Asia and especially Southeast Asia. Idea for you to set yourself apart from many other you tubers. As you go to really off beat places why not offer a special Boutique service to high end travelers retirees eg take affluemnt 1%ers to their choice of style location of restaurant. Eg ask what type of food experience they want and budget eg charge $100 -150 euros for a two hour dinner experience with you ( and they pay for all the food drink for all ) Your passion needs compensation and differentiation from the Mark Weins et al. I bet there are boutique people who would take you up on this . Would not surprise me if you put them into a video series eg put them with you on You tube you could charge a lot more for the notaraity . You managed to get me to travel to Thonburi after 50 years of sticking to Langsuan Silom Satorn high end locales searching out small places. I am Thai, I have never tried it and will never. I ever had food poisoning after having half cooked mussels bought from flee market, only well cooked for me but both of you are hard core ones. 😂 I hope, one day, you can have spicy competition with Mark as you always order very spicy!

Hello Gary ! Those pickle crabs look amazing. For the Som Tam part, there's a reason ! don't believe Som Tam is originated from Laos. Because papayas weren't native to south east Asia, They were imported from south America. And while Laos has no seashore, Thailand connected to the world via trading for over 7 centuries. So Thai Isan people are likely the first who invented Som Tam. Yes Thai Isan and Laotians are the same ethnic. They're both the descendants of Lan Xang people but were divided in French's colonization in the past. These people in the west side weren't colonized and later united with other ethnics of Thailand to become Thais. The colonized eastern land was later freed and people there named themselves Laos after. So Thai Isan people aren't actually Laos, just their sibling.
Lao is a people from a country called Laos 🤣😂. Laotian is a French given name for Lao people but Lao people they still called themselves Lao not Laotian.
Hey, noodles came from China…therefore stop making Pad Thai too…cause then it is original Chinese food. A bit of advise for farang wanting to eat Som Tum. The Green Beans are the hottest thing on the plate! At least you know the chili's are hot beforehand :P
If you could eat fresh Plara it mean that you are a semi- Thai person already .You could adapt yourself so good I think if you could speak Thai language later after you'll try to speak it's so good for you in the future
