@neurocosm Thanks for your support :). We like to use potatoes because they absorb moisture whereas cauliflower will tend to release moisture and make the crust soggy. You could use cauliflower but just add a bit of potato to it.
Can you freeze them after you have made them so that I can later cook them like shop bought samosa?! If so, will I need to half fry them before I freeze them as opposed to fully cook them. I'm from the UK...me and my mates love your videos...THANK YOU for sharing :)

Thank you for this video! the samosa is so versatile and so very fundamental as a desi snack! I have heard that resting the dough for 3-5 hours before construction helps to create the bubbly and simultaneously crisp texture that , for me, is perfection.... My favourite samosa ( the 'ultimate!!!' ) is made at The Skylark in Calgary. This is the closest recipe I have been directed to since. In response to another comment; these videos are enjoyed by many anglos, with gratitude!
these are REAL samosas. they are popular in kenya where i live but we make them a little different. i have had these types. such a wonderful appetizer.

I just wanted to let everyone know I tried baking these tonight. I made the dough with half white half whole wheat pastry flour and the dough came out the same. I brushed the samosas with oil and baked them at 400 degrees for 15 minutes then flipped the samosas over and baked them for 10 more minutes. They came out nice but obviously they taste better and puff up better when they are deep fried. But baking is always a healthy option for those watching their weight:-)
I just made these samosas...they are absolutely delicious. But doubled the recipe and made 14 with lots if filling left over. My guests will love these next week at our Indian Theme Dinner. Thank you for posting. I am freezing them in the meantime and hope when I reheat them in the oven they will be just as crispy as they are today.
+Diane Payne : Excellent! Little tip: Defrost them to room-temperature and then stick them in the oven...and then the last few minutes put them in a toaster oven on toast mode...helps crisp them up! Enjoy!

Hi I tried baking, I would brush the outside all over with peanut oil. It worked nicely, crispy and tasty. There were not the little air bubbles that come with frying, but, it was still successful.
@akemp7777 : We have never checked the temp. but you can always check it by dropping in a small bit of dough if it sits at the bottom of the pan it's too cold. If it pops up instantly, it's too hot. And if it sits at the bottom for a second or two and them comes up, it's perfect. Hope that helps :)

We have not tried so ourselves but a few viewers have baked instead of frying them and it did work well for them.

Actually, it is traditionally made with all-purpose flour (or maida as it is called).

This recipe is perfect. I just added little ghee..around 1tbsp in the flour while binding it. The result was amazing ....
I like samosa, and this veggie one seems good to eat. The samosas cooked well are worth eating.

We were told (motherly advice) that the lemon juice makes the crust crispier :), but you can leave it out and sub more water if you like.
