Personally musketeers are the absolute antithesis to Mongols. It's difficult to make many of them by the time they invade, but it is possible. And cannons will absolutely destroy Mongol units in siege battles.
Mongol had to send in four full stacks before they took a fortress from me as Spain. The only reason they won was because I didn't have time to retrain my units.
While we're talking about dealing with Mongols, I tend to just build up armies of trash (town/spear militia, peasants, etc.) with no general and just auto-resolve the battle. Usually gets a 4-5 hundred kills, and some of the militia still survive. Or, if I can get a really high-quality army there: general, 10 dismounted feudals, 4 pavise xbows, 5 good units of heavy cavalry. It's ugly, but I can generally in the field with this kind of army composition.
None of those units can deploy stakes, and you can only do so in the deployment screen. Even if he did have units with stakes, the spy prevents him from deploying.
Why dont you just destroy the artillery? yeah you would get sniped with horse archers but the enemy calvary couldnt get in you could easily repel the infantry right?
